I really love this recipe! My changes were minor by switching to the use of regular corn meal, almond milk and omitting the nuts. A keeper.

Lemony Chicken with Artichoke Hearts

Very good chicken recipe! Mt changes were : adding smoked paprika to the flour mixture, one TBS butter combined with one TBS olive oil instead of usung all butter and two TBS of capers. My lemons were small so I added the zest from one of them. The flavors were perfect. Thanks for sharing this recipe.

Cinnamon-Peach Cottage Cheese Pancakes

Made a few substitutions/changes: no butter, only 2 eggs instead of 4, whole wheat flour instead of white, honey instead of sugar, did not use salt, sprayed pan with oil instead of using butter and added frozen blueberries because I did not have peaches. really good!

Really good. I might suggest reserving extra the marinade, bring it to a boil and serve on the side. My company all requested this recipe.

Sweet Potato Souffle I

Sooo yummy. Even my husband who isn't fond of sweet potatoes loved it! I baked the sweet potatoes first and scooped out the inside using some of the skin. You won't be disappointed with this recipe!

Easy Grilled Tri Tip

I made this recipe for a group of people last night. Since I don't eat red meat, I can't speak for hand, but everyone loved it! I bought tri tip steaks at Costco which didn't need any trimming or extra work. The only thing that I did differently was that I added fresh rosemary and a touch more garlic. It was a great success and I will use this recipe again.
