Pumpkin Cake III

Delicious! I feel like it needs something to make it a little more spicy; perhaps nutmeg. But that's just a personal preference - this recipe is perfect as is. I used canola instead of vegetable oil. We loved it - thanks for sharing. :)

Whipped Cream Cream Cheese Frosting

This is a great recipe by itself, and also a good base to play around with. It's quick and easy, and the consistency is perfect for decorating.. I added a drop of maple syrup to mine for a pumpkin cake and my family loved it. Thanks for sharing :)

Sweet Russian Cabbage Soup

4 stars from a Polish chef! This recipe is pretty authentic and close to home. I did not find it too sweet or too greasy, like many other reviewers. (Hello, it's called "Sweet" soup!) However, I only use ground chuck which is not as fatty as supermarket chop meat. I used only 3 bouillon cubes to cut down on salt, and it was just right. The next time I make this I will use chunks of meat instead of ground, as another reviewer suggested. My only advice is BIG pot!!! Thanks for sharing.

Sarah's Banana Bread Muffins

This is a great recipe for moist banana muffins. Instead of walnuts, I used about 1/2 cup of regular chocolate chips. I also added 1 tsp vanilla. They didn't need to be in the oven for the full 30 minutes - I took them out after about 25, and they were done. I am definitely going to use this recipe again. Thanks for sharing!

It's ok. I substituted 1/2 C whole wheat flour. Bake above the halfway mark or your bottom will burn.

Oatmeal Blueberry Muffins

These are good, but a little dry. The only variation I made was to use 1/4 cup of whole wheat flour with 3/4 cup regular flour. I also used a shallower tin and ended up with 17 muffins rather than 12. Next time I'll try a little brown sugar and possibly another egg.

Basil Tomato Soup

Very good. I made this with the following modifications which yielded a very robust and savory flavor: I sauteed one small chopped onion in a tablespoon of butter for a few minutes before adding the other ingredients. I also added some chopped fresh parsley in addition to the basil, 2 teaspoons of garlic salt, a pinch of red pepper flakes, sea salt and black pepper to taste, and let it cook with a stalk of celery in the pot, which I threw away when it was done. I will definitely make this again, but next time will use a little less butter.

Macaroni and Cheese V

This was very good. I used a little more cheese than was called for; I used sharp cheddar and added 1/2 cup of parmesan/romano mix. Next time I will use more butter with the bread crumbs also. But it was very tasty and it went very fast.

Neat Sloppy Joes

These were good, but I felt like they were missing something. If I use the recipe again, I would use double the onions, half the celery and add some garlic. The condensed tomato soup works well. We had them on toasted buns with spicy monterey jack cheese.

Vanilla Pumpkin Pie

Definitely a more mellow pumpkin pie than the traditional spicy... The combination of pumpkin, vanilla and cinnamon is delicious. I ended up with a little more mix than could go in the pie crust, so next time I might make 2 small ones or 1 big one. I'll definitely be making this one again!

Best Tuna Melt (New Jersey Diner Style)

This might sound crazy, but this is the first time in my life that I have had tuna salad. It always freaked me out as a kid, but I decided I needed to try it now as an adult. It was delicious! I followed the recipe with a few exceptions: I used solid white albacore tuna fillets, half a clove of minced garlic, and red onion (and a little more than 1/4 cup.) I got a loaf of uncut white bread with a hard crust from the bakery that went just perfectly. My first experience with tuna was good, thanks to this recipe, and my boyfriend was impressed! ;)
