New Orleans Corn Bisque with Smoked Sausage

Reviewed: Feb. 9, 2011
I am so mad at myself! I read through a ton of reviews and had it all planned out in my head..."add creole seasoning...add creole seasoning"! And what did I forget?... yup, you guessed it. Regardless of that, my husband really liked this bisque (he also had fun saying "bisque" - think rich, snooty, clenched teeth accent)! I think next time I will cook the sausage with the onions and garlic and omit the butter...it really just sat on top of the soup, which then ended up too greasy. Oh, I also substituted a can of chicken broth for a cup of milk (I ran out!) Will definitely make again...this time with the creole seasoning!

Artichoke & Spinach Dip Restaurant Style

Reviewed: Feb. 7, 2011
This was okay. I made as it was written, tasted, then doctored, so think I can give it a fair review. It was too bland. I added the other 1/2 of the cream cheese package as other reviewers suggested and some sour cream that I thought would give it a little zing. Took it to a Super Bowl party where someone else brought a different spinach/artichoke dip, so of course I compared them...and sorry to say, I liked her's better. Probably going to ask her for her recipe. Won't make this one again.

Ham and Potatoes Au Gratin

Reviewed: Jan. 23, 2011
This is very similar to a recipe I have made for years. Only difference is the amount of butter used in the roux. This time I did make this with more butter so I could accurately rate it. But I do not notice a big difference, so if you are looking to cut calories...using 1/2 the butter would be a start. Also, 40 minutes is not long enough cooking time...75 minutes was about perfect. I did cover with tin foil for 1/2 of the cooking time and it turned out great...not dried out but brown and bubbly on the top! My girls gobbled this up! If you want to cut the cooking time slice the potatoes add a few sliced onions in casserole, cover with plastic wrap and microwave for 5-7 minutes...add ham and sauce and then bake 40 minutes. One of our favorites!

Fluffy Pancakes

Reviewed: Jan. 9, 2011
Had been using a different "fluffy pancake" recipe from this site for years...just found this one and I am never looking back! These were awesome! Light and fluffy...perfect! Only change I made was I used oil instead of melted butter...and that was only because I was lazy! I'm sure they would be even better with the butter...guess I will give it a go next time!

Easy Whipped Cream

Reviewed: Dec. 24, 2010
I agree with other reviewers...I did need to alter the recipe a little....but still think it is a 5 star-er! I was never crazy about the whipped cream I made with just cream, vanilla and powdered sugar, so the addition of the sour cream gives it a fuller consistency and a little tang! The only change I made was decreased the sour cream to 2 Tbsp and left the other things the same. I'll be using this to top my cheesecakes from now on!

Chocolate Eclair Cake

Reviewed: Nov. 27, 2010
Loved this recipe! Everyone was very impressed and it was so simple!!! I did attempt the chocolate topping but was not impressed wit the taste, so I found a review from MEME from a similar recipe and used that chocolate topping! It was perfect! Just mix 3T Butter, 3T. Hot water, 3T Cocoa powder and about 1 and 1/2 cup powdered sugar (to desired thickness) and pour over the top. Will definitely be making again and again!

Fudge Puddles

Reviewed: Nov. 1, 2010
I was quite disappointed in this recipe after all the great review I read! Something is amiss with the baking...either time or temp, but 14-16 min at 325 is too long! The cookie part was hard and over cooked. Also, I was expecting a softer cookie! Someone on the recipe buzz suggested using 1 cup brown sugar instead of the white...might be worth a try, if I made them again. And will try baking at 350 for closer to 10 min. The cookie part of this recipe should be doubled to use up all the cholocate filling. I used my Pampered Chef small cookie scoop to make into uniform balls then pressed down on each before baking with an ice cream scoop handle to make the indention. For the filling, I used a decorator bag with the 1M tip to fill the cookies...worked great! Also didn't have any milk chocolate chips so used 1/2 cup pb chips and the rest semi sweet. You can be flexible there.

Sour Cream Spice Cake

Reviewed: Aug. 25, 2010
I had never made a spice cake before and was asked to make one for a wedding last week, so I turned to the the AR recipe exchange and they came through...again! I did not have the allspice so substituted pumpkin pie spice which was suggested in another recipe, great idea! I found this to be a wonderfully moist, comfort cake! I did not make the frosting as the groom had requested cream cheese frosting, which I thought was perfect for this cake! I had never made a spice cake before, but I am definitely making this one again...and for myself this time!

Award Winning Soft Chocolate Chip Cookies

Reviewed: Feb. 8, 2010
It is about time I rate these cookies...I have been making them forever! This is the best recipe to use for a "big cookie", as we call it! It stays soft and is easy to spread. I half the recipe and use a 14" pizza pan and it turns out great!

These were one of my favorite new additions to my Christmas tray this year! Rolled mine smaller, maybe marble sized, and dipped in melted white chocolate. Drizzled with melted chocolate. Very decadent indeed!

Toffee Chunk Cheesecake

Reviewed: Jan. 9, 2010
Made this for my work Christmas party. Got good reviews, but I thought the layer of caramel/chocolate made the bottom crust too hard. Mixed toffee chips in with cream cheese mix. like other reviewers suggested. Saved half of caramel/choc. mix and drizzled on top.

Boston Cream Cheesecake

Reviewed: Nov. 16, 2009
Made this for my mom's birthday. Everyone seemed to enjoyed it. I think if I make it again I will use a 10 in. springform pan. I started with a 9 in. and used half of the cake mix, but if I had added the cheesecake mix, it would have overflowed, so used the second half of the cake mix in a 10 in. pan. Also will bake longer than 45 min., the cheesecake was not firm in the middle. Can't decide if I am crazy about the cake/cheesecake combo, but may give it another chance.

Very good! I followed the suggestion to add cocoa powder to the filling, think it would be good either way! Ended up adding more powdered sugar than it called for, but that was because I used low-fat cream cheese.

Quick and Easy Pizza Crust

So thankful I found this recipe. I usually have the fixin's for homemade pizza on hand, but just don't have the time to make the crust. This will make a quick midweek meal so much easier! Thanks for the recipe!

Half and Halfs

Reviewed: Jun. 13, 2009
Good idea. When mixing them up I thought it was odd that they did not decrease the flour by 1/4 cup in the choc. part, since you add 1/4 cup cocoa. But I followed the recipe and baked the first few (after refrigerating both doughs for 1/2 hr) and the plain was clearly flattening out more than the choc. So added more flour and that helped a little. Will probably use my own choc. chip cookie recipe next time like others suggested.

Marshmallow Fondant

Reviewed: May 13, 2009
I've been wondering where this recipe was...couldn't believe it wasn't on AR yet. I have used this a couple times and just love it. It is so easy and tastes sooo much better than the store bought fondant. The only thing I do differently is that I use vegetable shortening (Crisco) instead of melted butter to coat my hands and the counter when working with it, works wonders. Also this recipe comes out more ivory than white...so if you want a white fondant you can get the Wilton's Icing Color White-White (comes in a small 2 oz. bottle) to add to your fondant. Works wonders!

Sweetened Whipped Cream

This is so yummy! Love to mix this up quick in the KA for a beautiful topping for my cheesecakes. I have added a couple Tbsp. of raspberry sauce from the White Chocolate Raspberry Cheesecake from this site...or a few tsp of cocoa for a chocolate chip one. Very versatile.

What was I thinking? I am not new to AR...why didn't I read the reviews to this!!! DEFINITELY read the reviews! This is a good recipe but needs some flavoring. My family enjoyed it the way it was, but next time I will follow the suggestions of those "most helpful" reviewers!
