About this Cook
I am a mother to 3 beautiful little girls, and wife to one great husband. We live in a small town in Nebraska. We are diehard Husker fans, whether it be football, volleyball, baseball...doesn't matter...GO BIG RED! As a family we enjoy camping and boating in the summer. What little spare time I have, I spend baking, reading, or just playing with the girls.
My favorite things to cook
My favorite thing to cook would have to be something simple and quick. I cook to feed my family, but I bake, because I love it!! I enjoy baking cookies for the kids, cupcakes to send to school for holiday parties and birthdays and cheesecakes. I have recently started a small out of the home baking business...hoping to expand someday.
My favorite family cooking traditions
Growing up I would spend Saturday afternoons at my Grandma's, where she would be baking breads and pies and more pies to feed the family that came over for Sunday dinner. I may have inherited the love of baking, but unfortunately not the art of baking the perfect lemon meringue pie.
My cooking triumphs
Every evening that I actually get a home cooked meal on the table for my family is a cooking triumph to me!! Which, thanks to AR, is much more often than it used to be.
My cooking tragedies
If you asked my husband that question, he would keep you busy for days..."stick with what you do best" is his mantra to me...there have been quite a few leftovers that have skipped the fridge and gone straight to the trash can after trying a new recipe...but that doesn't stop me! As far as baking goes...as much as I love to bake, you would think I would invest in a good timer, can't begin to count the number of cookies, cakes, etc. that I have burnt.

Artichoke & Spinach Dip Restaurant Style
This was okay. I made as it was written, tasted, then doctored, so think I can give it a fair review. It was too bland. I added the other 1/2 of the cream cheese package as other reviewers suggested and some sour cream that I thought would give it a little zing. Took it to a Super Bowl party where someone else brought a different spinach/artichoke dip, so of course I compared them...and sorry to say, I liked her's better. Probably going to ask her for her recipe. Won't make this one again.

Ham and Potatoes Au Gratin
This is very similar to a recipe I have made for years. Only difference is the amount of butter used in the roux. This time I did make this with more butter so I could accurately rate it. But I do not notice a big difference, so if you are looking to cut calories...using 1/2 the butter would be a start. Also, 40 minutes is not long enough cooking time...75 minutes was about perfect. I did cover with tin foil for 1/2 of the cooking time and it turned out great...not dried out but brown and bubbly on the top! My girls gobbled this up! If you want to cut the cooking time slice the potatoes add a few sliced onions in casserole, cover with plastic wrap and microwave for 5-7 minutes...add ham and sauce and then bake 40 minutes. One of our favorites!

Fluffy Pancakes
Had been using a different "fluffy pancake" recipe from this site for years...just found this one and I am never looking back! These were awesome! Light and fluffy...perfect! Only change I made was I used oil instead of melted butter...and that was only because I was lazy! I'm sure they would be even better with the butter...guess I will give it a go next time!
