Green Tomato Cake

Only 3 Weight Watchers points plus based on these modifications: replaced all of the butter with unsweetened applesauce, reduced sugar to 1.5 cups, and replaced walnuts with chocolate chips (only because I love chocolate). Baked in a parchment-lined pan for 38 minutes and it came out very moist and yummy!

Zuppa Toscana

Wow! The only change I made was using sweet chicken sausage because my daughter doesn't like spicey foods. It was perfect for a cold autumn night after soccer. The amount of flavors in the few ingredients were amazing. BTW, 1 qt of water is four cups. I just used 2 cans of chicken broth.

In-a-Pinch Ketchup

I also ran out of ketchup while making meat loaf, so what a find! I only gave it 4 stars because I made some modifications - 3 TBS sugar, 3/4 Cup water. I didn't have allspice, but it tasted fine without it. I think the recipe is a keeper!

Cilantro-Lime Dressing

This recipes was amazing! Like the others, I reduced the honey to 2 TBS and instead of EVOO, I used vegetable oil so that it would impart less flavor. I also left out the jalapeno because my daughter doesn't eat anything spicey. Awesome as a dressing or a marinade.

Broiled Chicken with Roasted Garlic Sauce

This recipe is so good! Even my toddler enjoys it! I added crimini mushrooms to the sauce and it tastes just like something I've had at a restaurant (even regular button mushrooms were great in this recipe).

Chocolate Chip Banana Bread II

This is a fantastic and simple recipe! I like my banana bread a little "spicier" so i added a bit of cinnamon, nutmeg, and ginger. So good!

Cream Cheese Frosting I

This was quite good, but mine turned out to be more like icing than a frosting. I used milk instead of cream, so maybe that was the reason for the runny consistency.

Szechuan Spicy Eggplant

I made some modifications to the recipe and it turned out really good! I ommitted the shrimp and ground beef, reduced the soy sauce to three Tablespoons, reduced the green onions to only two stalks, doubled the chili sauce, and most importantly, I used three skinny Japanese eggplants instead of one large regular eggplant. It tasted just as good as I've had it at my favorite Chinese restaurant!

Garlic Chicken

This is very yummy, but instead of the regular breadcrumbs, I used Italian. The bake time seems to long, so instead of 30-35 minutes, I baked it 25-30 minutes. I serve it with pasta and tomato sauce and everyone loves it!

Cheese Ravioli with Fresh Tomato and Artichoke Sauce

Kung Pao Chicken

This was a very good recipe; it's so easy and very tastey. I make it often and sometimes instead of serving it over rice, I put it in a tortilla for a wrap. Also, whenever I am short on time, I skip the marinade part and it still tastes yummy.
