Sopapilla Cheesecake Pie

This was very easy and good! People loved it. I followed the recipe exactly except I used regular vanilla extract. The next time I am going to cut the butter amount in half. It just puddled on top and was not necessary.

Spicy Chipotle Turkey Burgers

These were really good, I even used ground 99% fat free turkey breast. I did mix shredded mozzerella cheese into the mixture instead of slices on top. It helped to keep them moist.

Big Soft Ginger Cookies

These are awesome. I've made these a bunch of times and everyone loves them! Sometimes I add some grated orange zest which is really good.

Tuscan Soup

This soup was very good. My husband said it was "amazing". I followed the recipe for the most part, but just went ahead and added the whole can of evaporated milk. I used quite a bit black pepper. I then added a dash of garlic powder, italian seasoning and sprinkled with really good parmesan cheese.

Chicken Enchiladas II

I really liked these a lot! I pretty much followed the recipe the first time. Next time I will add more seasoning and jalepenos or something to add spice. I agree that enchiladas are made with corn tortillas, but I would just ignore the name and stick with the flour tortillas because it works. I would also make more filling (add more chicken or maybe beans). I was only able to fill 4 12-inch tortillas.
