Cake in a Jar

My sister and I made this with Cinnamon Swirl Cake mix to send to my husband who is in the military overseas (for his Birthday) We sent him 2 jars and tried one ourselves. It really does seal! One thing is you have to use no more than a CUP of cake batter or you will be cutting the top of your cake off before you put the lid on. Now if only I had a food saver bag to put some icing in there for him!

Whole Wheat Blueberry Pancakes

They were great! Subbed 8th Continent Vanilla soy milk because of DD's milk allergy and used 2TBSP sugar instead of artificial sweetener. Made the kid's without blueberries(weird ones, they don't like blueberry pancakes, just plain!) and they still were great!

Boilermaker Tailgate Chili

I can't have beans so I subbed 1/2 can chiptole peppers in adobe sauce for the beans. I also didn't add the beer or beef broth (couldn't find any that were wheat/gluten-free). I fried 4 pieces of thick smoked bacon (no bacon bits here) and I only have smoked paprika. I know. Changes, blah, blah...... When you can't have certain foods you have to make changes. Hopefully anyone else that is gluten-free/SCD/primal/paleo diet can find these changes useful. :)

Eggless Milkless Butterless Cake

It was 50/50 here. Two of my kids didn't care for it, but my youngest & I liked it. Definitely put brown sugar on the top. It makes it more like a coffee cake that way. :)

Bran Flax Muffins

This was quite possibly the most INDESTRUCTIBLE MUFFIN EVER!!! I was rushed through the grocery store and completely forgot to get the flax seed and the oat bran, but I really wanted these muffins badly this morning. So I substituted wheat germ for the flax seed, ground up my own oats for the oat bran and sub'd 1 cup vanilla soy milk for the skim milk (dairy allergy in the family) and did not add nuts (nut allergy here also). The cook time was actually 25 minutes, not 15-20 like the recipe states. My 6 yr old, 3 yr old and 18 mo old loved them and begged for more! I love it because without the nuts they are only 3 WW pts per muffin and these are some sizable muffins. Definitely a keeper muffin recipe. Maybe next time at teh store I will remember to get the ground flax seed.

Chayote Squash Side Dish

If I could give it less than one star, I would. This was not good at all. I was excited to find a chayote recipe as we got 2 bags of it for free. I am extremely disappointed.

Homemade Black Bean Veggie Burgers

Due to a new dietary restriction I decided to try these. I, like other reviewers, had to double the bread crumbs also. I used red bell peppers since I didn't have any green bell peppers. I also forgot to add the chili sauce and they are still AWESOME. I suggest grilling rather than baking. The baking just didn't work out well @ all and they were falling apart. I ended up moving them to the grill (on lightly greased foil) and they came out PERFECT. I doubled the recipe and 1/2 of them are pre-freezing right now. I think that will also make a huge difference. I was scared there would be too much cumin & chili powder, but it was again, perfect. Love this recipe! Definite keeper and much better than Boca burgers.

Homestyle Potato Chips

HOLY MOLY! I didn't believe this would work, but it did! I just bought a slicer & thought I would look into a potato chip recipe. My husband & I were both really skeptical that these would turn out. My whole family LOVES them! We did what one reviewer said and used cooking spray instead of oil in the bag. Sliced the potatoes, put them on a paper towel (they only stuck a tiny bit after cooking-easy to peel off) sprayed the spray on, put salt/seasoning on them and nuked them for 3-4 minutes until brown. PERFECT! I tried using a plate to cook them on and all the heat went to the plate and it didn't work. Definitely use a paper bag/paper towel/paper plate to 'cook' them on.

Tuna-Stuffed Tomatoes

Made almost exactly as stated & YUM! Didn't have celery and used diced onion in it. Instead of mixing seasoned salt in w/tuna I sprinkled it on the inside of the tomato. YUM YUM!

Cream Cheese Cookies IV

So sweet. (I followed the recipe exactly-something I rarely do) I'll keep the recipe as it's not an awful recipe, but not that great for cookies. We're using it as the "shortcake" for our strawberry shortcakes with plain strawberries and milk on top. It helps cut that sweetness.

Spinach Quiche with Kid Appeal

This was easy to make and very good! I just altered it a tiny bit by adding 4 cloves (instead of 1?) of minced garlic near the end of the spinach/onion cooking time and we used mild cheddar instead of mozzarella because we were all out of mozz. We also used 1.5 cups of fresh chopped spinach. My vegetarian sister, meat eater hubby and veggie-phobic friend all throughly enjoyed this.

Peanut Butter and Pumpkin Dog Treats

Did what it said in the reviews- added in rolled oats, upped the amount of PB & pumpkin. I used gluten-free flour mix since my dogs don't tolerate wheat well. 350 for 30 mins- PERFECT. My dogs love them!

White Chili I

i only rated it a 4 because when I doubled the recipe I had to add more ingredients. I used extra diced green chiles, added about 6 cloves of minced garlic & because I only had (soaked) dry beans I had to keep adding water and bouillon (I had no broth)- about 8 cups total- which means I didn't have to add any salt to the recipe. I didn't top it with any cheese because I am allergic. VERY VERY good recipe!
