Spanakopita (Greek Spinach Pie)

I made this recipe the other day; it is wonderful and very easy. It does need to be seasoned up a little bit, so I added salt, pepper and a quarter teaspoon of mace but there is a huge variety of herbs you could add to this to edge it away from blandness. For a family of four, I found I could halve the amount of spinach with no detriment to the end result: the amount recommended in the recipe is great but my pan won't cope with it. I used "1 Cal Spray Olive Oil" to oil between the leaves of phyllo dough. Thanks so much for this, Silverwolf - it's a super recipe :-)

Catherine's Spicy Chicken Soup

I've just made a batch of this soup and it's very, very tasty. The chicken is a bit overwhelmed by the amount of chilli bean and tomato but it's still a lovely meal. The next time I make this I will try substituting condensed chicken soup for the condensed tomato soup. This quantity made 8 English pints of soup so I have stashed loads in the freezer for eating and enjoying later. Thre recipe is very easy to make up and there could be endless variations on it which is what makes a good recipe great! I left out the 3tbsps of chilli powder as this might have been too hot for our tastes but otherwise I made no alterations. Thanks for sharing your recipe, Catherine :-) I only rate it 4* and not 5* because the chicken is overpowered by the chilli and tomato so I thought it was misleading to call it a chicken soup - more a chilli bean and tomato soup with chicken.

Fabulous Fargozas

These were lovely and I shall certainly be making them again. I will use less sugar next time and substitute the mazzarella for mature English cheddar next time as I like a stronger taste of cheese. Thanks so much for the recipe :-)

E-Z Chicken Tortilla Bake

I made this recently with the corn tortillas. It has to be one of the easiest, tastiest recipes out and a boon if you are short of time. I shall certainly be making it again. I cooked it uncovered and it wasn't at all soggy. If anything it was a bit on the dry side, so next time I'll add a bit more milk or, perhaps, yoghurt.

Moist, Tender Spice Cake

I've just made this cake for the first time. The flavour is good, hence the four stars. However, I have had trouble with the baking time. After being in the oven (fan assisted) for 40mins at the recommended temperature, the cake was still uncooked in the middle, so I put it back in the oven for increments of 5mins, testing after each additional 5mins. After an hour and ten minutes the cake was cooked through to the middle but had a crunchy, overcooked layer round the outside. I baked it in a 1kg silicone loaf tin and I'm wondering if this created too great a depth of cake mixture to cook in the 40mins given in the recipe. Perhaps I should have used two sandwich tins instead of the loaf pan. Can anyone advise me? Has anyone had a similar experience? I don't want to give up on this recipe as I think it's a good one and my husband loves spice cake!

Portobello Penne Pasta Casserole

This recipe is excellent. The soy sauce definitely makes a big difference. I used fresh spinach and fresh basil, just cooking the spinach down in the minimum of water and then draining it well. I used the reserved spinach water to cook the penne in as it is full of spinach minerals. Instead of portobello mushrooms I used an "exotic" mushroom mix - shiitake, oyster, etc., etc., and it was wonderful. I used mozzarella in the sauce, but scattered crumbled feta over the top before putting it into the oven. I can wholeheartedly recommend this dish and will certainly be making it again.

Caribbean Sweet Potato Salad

I've just made this recipe for the first time. It is delicious and well worth repeating. For a start, it contains ALL my favourite ingredients and the tangy freshness of line juice with the sweetness of the potato is delightful. I didn't have any peanuts in the storecupboard so I used 2 tsps of crunchy peanut butter which I beat into the limejuice.It was good, but I think peanuts would have been better. Many thanks to you, Jessica, for this hugely tasty dish!

Asparagus and Mushroom Puff Pastry Pie

I made this yesterday, adding some chicken breast to the asparagus and mushrooms. Fabulous! My 8-year old granddaughter polished her plate and decided that she now likes asparagus and mushroom. Result!! I shall make this again and again. It was so quick to make and so delicious. Recipes like this are a godsend to busy cooks.
