Bean Burrito Casserole

Reviewed: May 17, 2011
Fast and yummy! I've made this a few time and I now keep burritos in the freezer so I can make this on nights when I need a fast meal. I used bean and cheese burritos, cream of chicken and put some of the cheese in the soup mixture, then topped with extra cheese. Takes 5 minutes max to get it in the oven.

Slow-Cooker Chicken Tortilla Soup

Reviewed: Nov. 15, 2009
This soup was great! I have made it 2 times now, the first time I made it exactly like the recipe posted. The 2nd time I made some changes, took others advice and put the chicken in frozen and shedded at the end, I used an extra can of chicken broth, no water, I used 2 cans of rotel 1 mild and 1 cilantro and lime- instead of seperate can of tomatoes and chiles. I also added black beans. MUCH better the 2nd time! I loved the flavor with the rotel (lime and cilantro rotel made a big difference). Topped with cheese, avacado, and sour cream. Used store bought chips. I will be making this again!

Angela's Awesome Enchiladas

Reviewed: Sep. 13, 2009
Awesome! I made it exactly as the recipe stated. My whole family loved it! My husband said it was the best enchiladas he ever had and my son told me we should give this recipe to the local mexican resturant so they can make enchiladas this good. I think will just keep the recipe and make it at home. Thanks for sharing.

Big hit!! Even for my picky eaters. My husband, who usually covers everything in a sauce, ate it without anything extra on top. This recipe will become a regular. Thanks for sharing it!

Grilled Chicken Taco Salad

Reviewed: Jul. 9, 2014
The chicken in this recipe is outstanding! I made it the way the recipe stated, except I didn't have cilantro, so I omitted it. It was fantastic! My picky eater even loved it. It doesn't need dressing, the salsa and black bean mixture with the sour cream were perfect. I did take the advice of another and sliced my chicken lengthwise to make it thinner and allowed the spices to cover more. I will definitely make this again!

Jalapeno Popper Spread

Reviewed: Jul. 4, 2011
This was great! My son and I were looking for recipes using the jalapenos we've been growing in the garden. We made this with a little change. Instead of using the canned chiles and canned jalapenos, I seeded and chopped 7 medium jalapenos (we like it spicy). I made up the cream cheese, mayo, jalapeno mixture ahead of time, then refrigerated it for a few hours. I then topped it with the cheese and we baked it. Sooo Good!
