Sicilian Lentil Pasta Sauce

Reviewed: May 4, 2007
I had to improvise the recipe, as I printed it our but left it at work. I boiled the lentils in some vegetable broth with garlic and italian seasonings. When they were about halfway done, I added some chopped onion and one jar of prepared tomato sauce. Served on top of cooked spaghetti, even my lentil-shy boyfriend loved it.

Turkey Bean Soup

Reviewed: May 4, 2007
So good and easy. I add frozen peas to give it some color. Great with crusty bread on a cold night, and freezes very well.

Unstuffed Cabbage Dinner

Reviewed: May 16, 2007
This was very good, although I had to make many changes to match what I had in the fridge. I used ground turkey, chicken stock, cole slaw mix, and brown rice, jar tomato sauce instead of the V8, and a mix of curry and cayan pepper instead of the soup mix. But it was excellent, my boyfriend called it "a keeper", and there is PLENTY left so I froze some for another night.

Stuffed Butternut Squash

Reviewed: May 23, 2007
Like another reviewer, I didn't stuff the squash--I just mixed the cubed squash with the other veggies. I used brown rice because that's all I had. It was ok, tasty and filling, but not spectacular. Update: I added another star. I made it again, followed the recipe more closely, and it was much better.

Spicy Baked Sweet Potato Fries

Reviewed: Jun. 6, 2007
My boyfriend and I love these. I cook them on 375 for about 40-45 minutes, turning occassionally. I don't use the taco seasoning, just a mix of spices, garlic, chili, etc. No, they don't get super crunchy like french fries, but they aren't fried.

Chicken Fried Chicken

Reviewed: Jun. 8, 2007
This came out so good. I left out the potato flakes (since I have no clue what they are) and added some garlic powder to the coating mix. Excellent.

Ground Beef Shepherd's Pie

Reviewed: Jun. 29, 2007
This was excellent. I substituted ground turkey for the ground beef, peas for the greenbeans, and used a chipotle-chedder cheese. My boyfriend is already asking for it again.

Cajun Baked Catfish

Reviewed: Jul. 3, 2007
This was pretty good. Just spicy enough and a beautiful color. It still needed something, I think next time I'll add some lemon juice. But, I'll definately make again.

Maple Salmon

Reviewed: Jul. 6, 2007
The best salmon I've ever made. Best of all, no fishy smell in the kitchen.

Egg Drop Soup II

Reviewed: Jul. 12, 2007
I'll give the recipe the benefit of the doubt, because the other reviewers said it was good. But, as I learned, DO NOT use egg substitute (i.e. better than eggs). I cannot begin to explain what the broth did.

Thai Style Shrimp

Reviewed: Mar. 22, 2008
Tasted like a dish you would pay $10 for at a Thai restaurant. Coconut and spices go well without an overpowering aftertaste. The only changes I made was substituting cilantro for the basil, and using frozen, cooked shrimp. Served over brown rice with a side of summer rolls. Excellent.

Chicken with Chipotle

Reviewed: May 6, 2008
I only had chicken breasts on hand, so I browned them in oil and than put the sauce together. I used plain yogurt, and it came out a bit watery, so I added some spinach to thicken it up. Came out very good, had a nice, smoky heat.

Jalapeno Poppers I

Reviewed: May 6, 2008
Made these for a party, they came out very good. They're a bit messy to put together, but have fun with it. If I made them again, I'd use smaller proportions, since I had a lot of the cheesy mixture left over.

Lentils and Rice with Fried Onions (Mujadarrah)

Reviewed: May 6, 2008
This was a little bland for my liking. I completed the dish, tasted it, and decided to caramelize and add another onion and a bit of minced garlic, which helped. All in all, just okay in my book.

Italian Peas

Reviewed: May 13, 2008
Well, I started the recipe before I checked my freezer, and I only had a bag of mixed peas and corn. I otherwise followed the recipe to the letter, and it came out fantastic. Definitely a keeper.

Connie's Zucchini "Crab" Cakes

Reviewed: May 21, 2008
These came out so good, even I was surprised. I didn't have any Old Bay Seasoning, so I just improvised from the spice rack. Major thumbs up!

Detroit Hot Honey Wings

Reviewed: Jun. 26, 2008
I love chicken wings, and these had a good taste. Although I suggest you watch them pretty carefully, mine got a bit charred, so you could barely taste the sauce over the burnt honey.

Cider Vinegar Chicken

Reviewed: Aug. 14, 2008
I gave it three stars because it is ridiculously simple to make. The taste was a little, well, odd, but in a good way. Not terribly vinegary. I had to add some parsley to the chicken, not for taste, just for color, and I recommend serving with brightly colored sides. I may make this again, but it still needs something.

Sloppy Joes II

Reviewed: Aug. 19, 2008
These were very good. However, I didn't add any sugar, and they were still very sweet. I added a few dashes of Worcestershire sauce to cut through the sweetness. Very tasty, definately a keeper.

Ten Minute Szechuan Chicken

Reviewed: Aug. 20, 2008
This gets three stars, because it was as fast and easy and advertised, but the taste just wasn't there. I hate giving bad reviews, but this tasted like cafeteria food. Salty and bland. Sorry.
