Raisin Pie

My 73 year old Dad remembers his Nanny's pies with such nostalgia, when he mentioned raisin pie, I was intrigued. This was wonderful and complex beyond it's simple ingredient list. I used a lard crust recipe (because Nanny only made crusts with lard!). It was loved by all. My Dad's face lit up like a little boy when it was served. Made a very lightly sweetened creme fraiche to dollop on top which helps balance the intense sweetness of the pie. Thank you for such a special recipe.

Golden Yam Brownies

Perfect "trick" food to get my vegetable-phobic son to eat the good stuff! I agree with previous reviewers that the glaze is definitely optional without any consequence. Sweet, gooey, and filling. Love this "tricky treat"!

Dash's Donair

One of my absolute favorites! The Donair is full of flavor and makes the world's BEST pita sandwich. I cool the Donair well and slice paper thin, then crisp the slices in a hot pan before loading up into a pita with chopped tomato, cucumber, and fresh mint. Drizzle with sauce and a squirt of fresh lemon. Add feta if you are feeling luxurious! Such a fantastic, straight-forward recipe.

Chicken Cordon Bleu II

Used this as inspiration with a few changes: dredged in the paprika seasoned flour, then egg wash, lastly seasoned breadcrumbs before browning. Added a minced shallot to the skillet, deglazed with wine, added cream and reduced to a rich sauce, no need for cornstarch. Finished the rolls in a 350 oven. Delicious and brought back wonderful food memories. Served with rice and baby spinach leaves lightly dressed. Thanks for this!

Chiles Rellenos Pie

Simple & yummy. I added a few fresh elements as to not feel so guilty eating so much of this: fresh cilantro, sauteed diced onion & chopped scallion between the layers. This was a great make-ahead served with salad & sliced avocado. Thank you for this.

Clark's Quiche

Clark....be still my heart! This is rich, delicious...outrageous! I love that it made two LARGE quiches. I gave one to my parents and kept the other at home. Everyone raved. Thnak you so very much.

Corn Casserole II

This is a must have in my family. It is great for the holidays with turkey, etc. I also love it room temperature in the summer with a grilled ham steak and spinach salad. For the reviewer who had setting issues: as I read the recipe, you bake for 30 mins, top with cheese and bake for an additional 15 minutes. 45 total. It does "set" as it cools a bit as well. Love this, many thanks.

Day Before Mashed Potatoes

These were a perfect addition to a "gift of food" for my Mom and Dad's freezer. I followed the recipe exactly and loved the results. I use (and swear by) a ricer to "mash" my potatoes, which I believe adds great fluffiness to any "mashers". I was able to pack and freeze 4 large portions and they reheated perfectly. Thanks for this!

Firecracker Grilled Alaska Salmon

I love this recipe. I marinate whole sides of salmon overnight and roast on sheet pans until just cooked through. I can feed 300 guests absolutely delicious salmon quite easily. I make a separate batch of marinade that i cook down to a nice syrup and use that to glaze the finished salmons. They are delicious sliced cold with bean sprouts, cucumber, shredded carrot & toasted sesame seeds sprinkled with lime & sesame oil. I also love them warm with sticky rice and a few stalks of tempura'd vegetables. Thank you for this summer no-fail presentation.

Bronco Burger

Read this recipe last night, had dreams of juicy burgers....so I made them tonight. Better than my WILDEST dreams! I didn't have fresh jalapenos (shame on me) BUT did substitute a can of roasted mild chilis. I added a bit more hot sauce to compensate. They were delicious, so delicious. Thank you for this awesome burger. I made the whole recipe, cooked 3 for DH and I and froze the rest individually.

Tortellini Soup I

We love this soup! Substitute uncased turkey sausage for pork for a lighter meal. Also, use a good quality tortellini. I made with a dried brand (not-so-good) and with refrigerated fresh (so-so-good).....the best ingredients make such a difference!

This is so very good. The combo is fun, yet quite a beautiful presentation. I get the "what is that crunchy stuff?" queston all the time......lol. I never ate ramen before....but apparently I'm the only one!

Chili Rellenos Casserole

My family thoroughly enjoyed this recipe. Admittedly, I played with it by adding sauteed onions, garlic, chopped fresh cilantro and a tiny bit of chipotle in adobo to the tomato sauce.The evaporated milk was an interesting ingredient....and the "topping" had a light, crusty mouthfeel. Realy good!

Rempel Family Meatloaf

I love this recipe. It makes luscious meatloaf. Is it a bit heavy? Yup.....but use a cooling rack over a cookie sheet and it is a lot lighter.

Pepperoncini Beef

Love this simple recipe! I add a few garlic cloves to the pot and serve the butter-tender meat on crusty taosted rolls with melted mozzarella, a bit of cilantro & a squirt of lime. FABULOUS
