Easy Oatmeal Muffins

The oven temp is too high! Set at 400 degrees and bake 17 - 20 minutes. Also, try adding a low sugar vanilla or strawberry yogurt for some extra kick.

Baked Asparagus with Balsamic Butter Sauce

So good! I cooked the sauce with fresh diced mushrooms and tossed with goat cheese / sun dried tomato raviolis and asparagus. Excellent and so easy.

Sour Cream Banana Coffee Cake

this is so good and not too sweet. Recipe definitely needs to be doubled, still only filled the bundt pan 1/2 way. The batter was thick which concerned me but it turned out superb! I did not add nuts, instead I added about 1/2 bag of mini choco chips, also subbed about 1/3 of the sugar for agave syrup and instead of all white flour I used part whole wheat & ground flax seed.

Delicious Raspberry Oatmeal Cookie Bars

I doubled the batch, did as another suggested and added 1 egg and reduced butter to 3/4 cup. Replaced 1/4 cup of the flour with wheat germ and added two heaping tablespoons of vanilla protein powder. It's delicious!

Incredibly Cheesy Turkey Meatloaf

Super easy and delicious! I used part feta cheese and part colby, added some garlic powder and a little shredded carrot, baked for an hour and it was perfect. This goes well with a sweet potato casserole. The meat loaf makes a great sandwich the next day too!
