Lentil Soup with Lemon

This is so yummy! It reminds me of the first time I had and fell in love with lentil soup in Cairo! Don't need the tomato paste or the stuff at the end (lemon, oil, etc.). I did make it with 1/2 red & 1/2 green lentils. I couldn't stop eating it, it was so good! Definitely will be my staple lentil soup! Realistically, it makes about 3 servings.

Apple Crisp II

SO YUMMY! I sprinkled nutmeg over the apples before adding the crumble mix on top. I also baked for a little longer so the topping was a little crispier. We couldn't get enough!

Mad Hatter Salad

I love this salad, it's amazing and so delicious. I used Asian Ramen. Also, just got a head of green and a head of purple cabbage & just used 1/2 of each. Also grated a few carrots in there. Not many people ate it cause I don't think coleslaw is real popular, so I took it home and ate it for days!

Too Much Chocolate Cake

i only had a smaller box of both the devils food cake mix (15 oz) and chocolate pudding mix (3 oz), so I just added a little less than a cup of sour cream and applesauce (instead of oil, cause that's what I had) and a little less than a 1/2 cup water. I put 3 egg whites and one whole egg with yolk. I made cupcakes and baked for 20 minutes. They came out perfect. Frosted with store bought frosting and they were delicious!

These were great. I needed gluten free, so I used gluten free quick cooking oats, puffed millet (for extra volume), but didn't have any of the seeds, wheat germ or nuts, so I didn't use any. I put extra dried fruit in (I used mango, apple, prunes & raisins). They were delicious! I'm sorry, I didn't mean to completely change or gut the recipe, but wanted a healthier, gluten free recipe. I will definitely use this again. Thanks for posting!

Joe's Fusion Chicken Pad Thai

Didn't have all the ingredients, so I had to improvise. Also, used gluten free noodles. I sautéed the garlic, put canned chicken in (to save time), stirred in an egg, mixed in peanut butter, poured over cooked noodles, stirred in white vinegar, a bit of walnut oil, added chives, sugar, salt & pepper. Was really delicious. Didn't mean to change it, but it sounded so good, I had to make it!

This is ABSOLUTELY DELICIOUS!!!! I used applesauce instead of oil. This is so moist! I also added chocolate chips which were great, although it would be great without them or with raisins!
