Cola Chicken

wicked good! did add some stuff, though. i browned the chicken first and also added veggies: onion, garlic, carrots, celery and red peppers (was trying to use them up). SO GOOD! was iffy on letting it boil for so long...but you def have to do it to get it to thicken up. would be great to serve up to a house full of peeps :o)

Thai Cucumber Salad

Three Cheese Garlic Scalloped Potatoes

Wow! So rich and yummy. Subsituted garlic for some garlic cheddar cheese I picked up in Vermont. This I will def make again. Had the oil issue as well but just drained some of it off

Swedish Meatballs

This was really good. I didn't have the allspice so just omited it. I will bake the meatballs next time. Its a texture thing...I like a firmer meatball...not a "steamed" type.

Tuscan Cream Cheese Spread

Roasted Pork Loin

This was fabulous! I actually doubled the "rub" ingrediants and added a little olive oil to that..then I butter flied the pork roast and spread half of the mixture in it, closed it and spread the rest of the mixture on top. Followed the recipe the rest of the way. VERY GOOD

Oven Stew with Burgundy Wine

Holy Cow! I don't think I am going to make Beef Stew in the crockpot again. Sooo tasty. I omitted the celery (hubby doesn't like it) doubled the water and wine (used Merlot)added 1 big can of stewed tomatoes, 4 cloves of garlic finely chopped, a half a bag of frozen green beans and 3 reg size potatoes cut up. Cooked it 2 1/2 hours then added some cold water/cornstarch mixture to thicken it up a little bit and cooked another 1/2 hour. FABULOUS!!

Janet's Rich Banana Bread

Wow! Fabulous...and it stayed moist for days. I did follow others recommendation and used 1/2 br sug and 1/2 white. Omitted the nuts (don't like nuts in my bread) and I used 3 bananas...2 mashed and one sliced.

Baked Teriyaki Chicken

First time cooking with boneless thighs. Don't know why I waited so long. This was wicked good. I didn't have regular soy sauce, just dark soy sauce so I think that made it a little more intense than intended. Tasted fabulous, though. Will def make again but use regular soy sauce. I also added 3 cloves of garlic just because I love it.

Downeast Maine Pumpkin Bread

This was incredible. I am now required to make it for all family holiday functions. I tried on suggestion of using sugar to coat the pan. I liked the flavor it imparted to the outside of the bread but it made it kinda tacky feeling. I will try with the flour and see if that changes it.

FANTABULOUS! These were a perfect combo of crunchy/chewy. Used butter instead of margarine and used half white/half brown sugar and cooked on a pizza stone. Yummy

Andrea's Pasta Fagioli

Wow..this was good. I did add a can of diced tomatoes, some frozen spinach and I added 2 chicken bouillion cubes to the water before hand. This is a keeper and it was so inexpensive to make. The pasta did expand and soak up most of the broth. I actually like it like that but will just add a little bit more water when reheating. Kept all the seasonings the same but did add some pepper.

Apple Crisp II

This was great! I ran out of corn starch so I used flour, instead and it worked pretty good. I also used 1 cup of oats instead of 3/4 cup because i like the crumbly-ness of oats more. Very easy to make.

Cream Cheese Blueberry Pie

WOW! This was by far the best blueberry pie I have had. Its like haveing the pie and whipped topping all in one slice. This was also very easy to make but looks like it was hard. I did add some vanilla to the cream cheese mixture

Apple Slump

This was really good for what I had on hand. I had apples but no oats or pie crust (don't make my own) or tapioca. I added a dash of cinnamon, sugar and nutmeg to the batter and I mixed the apples into the batter. Tasty

Brown Sugar-Caramel Latte

This was so good! I used Splenda Brown Sugar blend and Smuckers sugar free Carmel Sauce (made with Splenda) and I couldn't tell the difference. This will be a weekend staple.

No Sugar Added Cookies

These were really good! I added a couple packets of Splenda. They don't look so good after a couple of days, though. The banana turns the cookies kinda brown. Luckily they usually don't last more than a day or two at my house :)

Chicken Bake and Rice

This was very good. Tasted like the Doris Chicken my mom would always make. I only had a couple of tablespoons of cream cheese so I also added some cream and some parm cheese to make up the difference. Fabulous!
