Barbecue Ribs - Baby back

These were delicious. I was skeptical about the sauce bc at first it didn't taste like a bbq sauce but it was great! I cut into individual pcs (2 ribs per) cooked the ribs meat side down in double wrapped tin foil at 225 degrees for 4 hrs. They were very tender but I think next time I will cook at 200 degrees for 5 hrs. I then marinaded them in gallon Baggie over night in fridge. Marinade calls for chili sauce, I used 2tsp chili powder and 1tbsp of Siracha. They weren't spicy but had small kick. Then grilled them the next day on top rack on low heat for about 15 min, they didn't need any longer then that. Finally before serving I basted them with the remaining marinade from the Baggie and served the rest of the sauce in a bowl. Yummy!

Taqueria Style Tacos - Carne Asada

OMG this is delicious!!! I followed exactly except marinaded for 24 hrs overnight. Used 3.5 lbs of meat and it made 10 large fajitas (2 per person) Served with green peppers and onions sautéed with cumin, garlic powder and chili powder. and then fresh chopped onions and cilantro, etc. Grilled for about 12-14 min on low (after wiping down meat with paper towel before putting on grill to reduce flare ups). Amazing - would be great serving with some homemade chimmichuri sauce!

Baked Garlic Parmesan Chicken

This was good. I needed more of the olive oil and garlic mixture to coat chicken (about double what recipe calls for). I had to bake for about 32 min. Next time I will leave off the additional breadcrumbs on top.

Doreen's Oriental Swordfish Steaks

This is delicious. I used this recipe to marinade swordfish steaks for about an hour to hour and half and it was delicious. I followed exactly except used ground ginger (fresh called for 1tsp, I used 1/2 tsp of ground ginger) amd added some green onions.

Easy Pizza Sauce

Quite possibly the best pizza sauce ive ever tasted! Only thing I did differently was use fresh garlic and I didn't have just oregano so I used Italian seasoning...mmm mmm thanks!

Slider-Style Mini Burgers

These were great! Easy and excellent for party. I used 3lbs of ground chuck, 1/2 onion diced finely (and cooked those in with browning meat) and 1-1/2 packets of french onion soup mix, next time I think I may just use a full 2 pkgs. and a whole onion. Also I added about 2 tsp of garlic powder. I let meat cool after draining and used the same recommended amount of mayo for the original recipes 2lbs of meat and used abt 2-3 cups of mild cheddar cheese. I used tin foil as my cooking apparatus and sprayed bottom with Pam. Placed bottom half of Hawaiian rolls on tin foil, spread the meat mixture over and put tops on. Then I wrapped up tin foil tight and placed on baking sheets for recommended time + additional 5 min. Keeping them in the tinfoil definitely keeps the bread soft. Using the 3lbs if meat I made 36 burgers (and even had prob 2-3 extras worth of meat but I ran out of buns). Will definitely make again!

Cranberry Spinach Salad

This really was easy and so delicious! Tastes like the fancy salads you order at a restaurant but yet can somehow never achieve the same level of taste at home. Well not anymore! I followed exactly except instead of the minced onion, I just added red onion to the salad itself and I also added good blue cheese crumbles. Will be making this often!

Pork Carnitas

This was delicious and full of flavor! I doubled spices in the broth mixture and added cayenne pepper for some spice. After removing the meat from the sauce mixture I pulled meat apart and placed on baking sheet. Sprinkle all same seasoning again (so by this time I've about tripled if not quadrupled the amount of seasoning used) used in the cooking broth onto meat, including garlic powder this time and salt to add more flavor. Mix and then broil for 10 min, stirring halfway through.
