Grecian Pork Tenderloin

Very tasty. The lemon really infuses the pork. I browned it on the stove top first, then put in the oven uncovered for 30 minutes at 400 degrees. I let it sit for 10 minutes, covered before I served it. Everyone loved it. Will definately do it again.It definately does have a lot of marinade left over.

OMG!! This was so good. I will definately do over. I did exactly as receipe called for except for the sherry. I didn't have so I used port instead.

excellent though nelson doesnt like it. makes for a very nice presentation. Remember to blanche the asparagus first for a nicer look.

Artichoke Chicken

Not great. Used 1/2 sour cream & 1/2 mayonaise & turned out a little to sour. Also used marinated artichokes. Was a little to much of a flavor explosion in the wrong direction. Needs some fine tuning & downgrading.

Sea Bass Cuban Style

This was very simple to make. The taste was excellent. I subsituted reg. tomatoes for plum. I also used Tilapia instead of bass. Will definately do this one again, might even try the sauce with chicken.

Tapenade

While the flavor wasn't bad, the dip doesn't look so appetizing. As a result, a lot of my guests just skipped over it. Most of them had never heard of Tapenade & were not moved to taste it. Threw most of it out. Big waste.

Smoked Salmon Spread

Although I don't like Salmon I thought I'd try this spread since it had such good reviews. Though it was a little pricey, everyone seemed to like it. A close friend even asked if there were any leftovers she could take.

Ham and Fresh Basil Pinwheels

These were wonderful. They were easy to make. 1 package of tortillas is plenty. I followed instructions exactly & the taste was amazing. The combination of the fresh basil & the sundried tomatoes really made this a hit. I made these 1 day ahead of time, covered them well with saran wrap & they held up nicely. Will definately do again.
