Mexican Lasagna

Yum! I too made an extra layer of tortillas, and added a LOT more cheese (bf is a cheese addict), added sliced jalapenos, green onions, and a diced roma tomato instead of the canned ones.

Baked Kale Chips

I liked these, but you need to keep an eye on them. Some of mine were burnt (or they tasted that way, at least). I made two batches at the same time. The first one I used olive oil and cajun seasoning, and the second batch had olive oil and sriracha. I hardly ever buy kale, so I probably won't be making these again, but it was fun to try something different. Thanks Lucy.

Beef and Bean Chimichangas

I really enjoyed these. I didn't have enough taco sauce, so I threw in a can of tomato sauce and extra seasonings to make up for flavor. The bf really enjoyed it, so I guess this is a keeper. Thanks, Nicole!

Zucchini Patties

Wow! These little guys turned out fabulous! I added a dash of garlic powder and red pepper flakes to the batter for an added kick, and served them with sour cream. For my first time making these (and eating them, for that matter), I fell in love. Thanks, Sherlie!

Mmmmm, delicious! I added a dash of chili powder and cumin, omitted the salt, added a bit of dried cilantro, used a cubanelle and an ancient red pepper, and used less corn and beans (not a fan). I've had this recipe in my box for almost five years now, and I'm sorry that I haven't been able to try this sooner. I'll definitely make this again.

Green Beans with Peppers

Ehhh, I did not care for this. I used a mix of red, yellow, and orange bell peppers, as well as a cubanelle and some fancy red kind ( I forgot the exact name). I was more impressed with the pepper/onion mix, so perhaps I'll salvage that and do something with it. Even after adding some garlic powder, it was still bland.

Mouse's Macaroni and Cheese

This was devine! I used shredded pepperjack cheese rather than the American, and added a bit of minced garlic, red pepper flakes, and regular mustard instead of the powder. The bf scarfed his first bowl down and begun his second before I finished my first. I'm definitely keeping this, thanks mouse!!

Steak Stir-Fry

This was my first attempt at making stir-fry, and I'm so pleased with how it turned out. I added baby corn, and unfortunately, I did not have any ginger, so I substituted a pinch of cinnamon (it worked out alright). The end result was a bit bland- next time I'd add more garlic, perhaps a bit of red pepper flakes, and perhaps some other seasonings to kick things up a bit.

I've never made manicotti before, but it turned out really well! Even though I used the bag method to fill the manicotti, I still found it difficult to fill them well. I'll blame my own motor skills on that one, though. The boyfriend devoured this in record time. Thanks, Anny!

Vegetarian Tortilla Soup

Really good, although I had to make adjustments for the ingredients I had on hand. I didn't have the pepper and onion mix, so instead I sliced up carrots and chopped a tiny bit of onion I had leftover. Instead of chile peppers, I added banana pepper rings, and a generous serving of hot sauce. I omitted the corn (don't like it) and the salt. The end result was sooo tasty! Mine came out rather thick for some reason (like a stew consistency), but it was still great. Thanks for the recipe!

I enjoyed these. Yeah, you may have to "dress them up" to your liking, but for someone who is watching calories, this is a nice, healthy option. I had to improvise and used dried cilantro, as that is what I had on hand. I also added sliced grape tomatoes. Thanks for sharing, Valkaryn.

This a good starter recipe. For convenience sake, I used pre-cooked, Oscar Mayar Deli cut chicken, halved grape tomatoes, added a dash of red pepper flakes and oregano, and reduced it to one serving.
