Quick Tomato Sandwich

This was good. A lot like a BLT, minus the bacon. I used shredded lettuce and canned diced tomatoes, both were leftovers I needed to use up. I left out the salt, but other than that, I didn't change a thing.

Barley Lime Fiesta Salad

Mmmm, delicious! I omitted the chipotle pepper, instead added some thai peppers I grew from last summer and had frozen, instead of corn syrup, I too used honey, and instead of white vinegar, I used rice wine vinegar. I let this sit in the fridge overnight, and it tasted fabulous as a light lunch right now. Oh, I also left out the salt (of course), and onion powder (didn't have any on hand). I'll be making this again, thanks Christine!

Sloppy Joses

These were awesome!!! To make them more "Jose-ish", I used about 1/2 the amount of ground beef (instead using ground sirloin), but then adding two sticks of chorizo. I omitted the corn, and topped with a bit of mexican style shredded cheese. I also added a teaspoon of cumin. The boyfriend said "this is a definite do-over." (I think he meant "do again!" He was in a slight food coma after polishing off two bowls of this). Thanks for the great recipe!

Chickpea Salad II

I really liked this! I had to use rice vinegar, as I didn't have balsamic on hand, but it was really quite good! I left out the salt and cheese, but I thought it was great. Normally I don't like chickpeas (unless I'm eating hummus), but I was surprised how tasty this was. Thanks, Karkles!

Pita Chips

I liked these! I was looking for ways to use up some pita bread I had, and this was perfect. I don't have a brush, so I just drizzled the oil over the pita triangles, and then sprinkled the seasoning. (not the chervil, I don't have any). Thanks, Dawn.

Spicy Spaghetti Squash

I had to make quite a few changes, such as using dried parsley (it's all I had), white wine vinegar (don't have red wine), used tomato sauce because it's all I had, and left out the ground turkey. I loved it, though, so delicious.

Spinach and Feta Pita Bake

I LOVED this! I left off the mushrooms (can't stand 'em), and I didn't chop the spinach, just kept the leaves whole. It was my first experience with sun-dried tomato pesto; I'm not sure how I felt about it. I liked it, but I would probably use less next time, and up the spinach and tomatoes. Spaghetti Squash I

Yum!!!! This was SOOOO GOOD! I'm a pasta freak, and I'm trying to watch my weight and carbs, so I had to have something similar to spaghetti, but much healthier. This was perfect. I've had spaghetti squash before, but never made my own. It's incredibly easy! And, it makes a lot! (At least mine did, my squash was huge). I threw a bit of red pepper powder in mine for an added kick, and it was perfect. I had to use dried basil, as I hardly ever buy fresh. I'll be making this again and again. Thank you, James!!

'Calabacitas Guisada' (Stewed Mexican Zucchini)

Yum! I really, really enjoyed this. I scaled the recipe to "2", as I was the only one eating this. I didn't have stewed tomatoes, so I used a can of tomato sauce, and instead of cheddar cheese, I used shredded pepperjack. I also added a dash of cayenne pepper for added flavor (and left out the salt).

Spicy and Cheesy Egg and Tomato Frittata

I had to make some adjustments, as I don't have an oven safe skillet. So, I started out on the stove, as usual. Then, I transferred the egg to a microwave safe dish, threw the cheese on top, and nuked it for a minute. Came out perfectly. I topped mine with fresh pico de gallo from Trader Joes and for the cheese I used a taco blend from Sargento.

Cajun Chicken Burgers

Oh my, this was fabulous! And it's good for you, which is a huge bonus! I eyeballed the ingredients, adding a bit more worcestershire and hot sauce, and I had to use sandwich bread, as I didn't have any buns on hand. I will DEFINITELY be making this again and again, thanks so much!

Wacky Mac® Shrimp and Sausage Gumbo

Okay, I had to make quite a few changes to adapt to the ingredients I had on hand. I used half of a medium, white onion; a couple small orange and yellow bell peppers; three small hot peppers (not sure what they were, I grew them over the summer and forgot their name); vegetable broth; chicken instead of shrimp; left out the salt; and added creole seasoning instead of the oregano (oregano? in gumbo? strange...). I thought the end result was just okay. I prefer my gumbo to be served with rice, not pasta. It was fun to try something different, though.

Sausage Spaghetti Spirals

Yum! I wouldn't expect anything less from a Wheaton-ite (well done, Carol!). I used a mix of cheeses, and it turned out fabulous. The bf hasn't tried it yet, but I'm sure he'll enjoy it (once he picks out the green pepper, of course). I'll be making this again, thanks again!

I loved this! I used roasted red pepper hummus (still kept the diced red pepper, too), and spinach leaves instead of lettuce. Oh, and I used ARNOLD brand sandwich thins, the multi-grain kind. Delicious!

Crab and Red Pepper Soup

This was good, but I also prefer a chunkier soup. Next time, I don't even think I'd puree it! Also, I don't like that the crab taste was so hidden. I'd add more crab meat next time, and different spices. The soup was a bit bland.

Easy Egg White Omelet

Yum! I've been slacking on sticking to Egg Beaters (they are so expensive!) But Trader Joe's sells them for a reasonable price, so I picked some up, and was thrilled to find this recipe. I omitted the mushrooms, salt, green peppers, and pepper, and added roasted red peppers, fresh minced garlic, red pepper flakes, green onion, and sprinkled freshly grated provolone cheese on top.I love the convenience of using the microwave for this, too! Thanks so much, Donna!
