Chocolate Chip Muffins

A coworker requested me to make a sweet treat for Valentine's Day, and since I can't bake, I scrambled to find something foolproof. This recipe seemed easy enough, so I gave it a go. I think next time I'll add a bit more milk to the batter, because mine was very thick and I had a hard time getting it into the muffin cups. Not pourable at all. Also, we don't have muffin pans, but I guess it was tart pans I used (I know nothing about bakeware!) So I ended up with 24 lil' mini muffins. My coworker was thrilled with the results, I however have mixed feelings about them. They do have a slight cornbread taste to them, which I wasn't crazy about. Overall, this is a good recipe to use as a jumping off point to be creative with. Thanks.

Frogmore Stew

This was interesting, but good! I left out the shrimp, as I don't care for seafood, and with corn being out of season, I had to use frozen cobs. I also threw in some chopped onion. I'll make this again, thank you!

Mini Ham And Cheese Rolls

Yum, these are tasty! I used sesame seeds in place of the poppy seeds since that's what I had on hand. Instead of drizzling the mixture on top of the rolls, I brushed it on using a pastry brush, which helped cover everything evenly. Thanks for the recipe.

Andouille and Chicken Creole Pasta

This wasn't bad. I followed the recipe exactly, except I left out the mushrooms, as I don't care for them. I even tried the suggestion of adding a bit of cayenne pepper. The amount of spice was perfect, however, I'm not sure if I cared for the sauce in general. It reminded me of gravy, but I suppose that is because of it's color. Also, where do the 2 tablespoons of margarine come in to play? I'm guessing when you cook the sausage and chicken, but the recipe doesn't say. Not sure if I'd make this one again, but it was a nice way to spruce up the ol' linguine.

Peppered Cilantro Rice

I like this rice, but I thought it was a bit bland. Next time I would add a bit of seasoning, maybe some cumin? It does need a little something though, I just can't put my finger on it. Thanks for the recipe.

Creamy Pepper Jack Cheese Soup

Great soup! The only change was I used dried, minced onion, about 2 tablespoons worth. My soup wasn't as creamy as I would like, so next time I would probably use 1.5 cups of milk instead of 2 cups. This soup is perfect on a cold, windy Chicago day. Thanks Austin!

Broccoli and Ramen Noodle Salad

This salad is wonderful! I followed the recipe exactly, but after reading other reviews, I made (quite a few) additions. I added sesame oil, dried cranberries, a teaspoon of mild giardiniera, chopped parsley, toasted sesame seeds, a teaspoon of minced garlic, half a teaspoon of mustard seed, and a dash of soy sauce. Thank you for the recipe.

Pasta with Kielbasa and Sauerkraut

What a flavorful dish! I really enjoyed this different take on pasta. I used Penne pasta since I had it on hand, and regular mustard because that's all I had. And, I'm not a wine drinker, so I had to omit the white wine as well. Regardless, this turned out well, and it tastes great the next day too. Thanks!

Hot Dogs 'n' Rice

This is like a economical version of jambalaya; but that isn't a bad thing. It's convenient because it uses ingredients that are on hand. I used minute rice though, because that's all I had on hand so my cooking time was considerably less. For a quick lunch, this fit the bill. Thanks for the recipe.

Cheesecake Dip

I hate to agree with Tracy, but my dip was very runny, too. The only modification I made was I used 3 oz. of cream cheese instead of the Neufchatel. The taste was there, it just wasn't very dip-like.

Mississippi Hot Caviar

I don't know what to make of this. For some reason, the Italian dressing throws everything off. It completely hides the flavors of the peppers and onions. The amount of beans is excessive, I think, 2 cans would be more than enough. If I were to make this again, I'd double the amount of jalapeno, or perhaps use a serrano pepper instead, and add a teaspoon of cumin. I won't be making this again, but it was nice to try something different.

Ham and Pineapple Pinwheels

Yum! I actually found the pineapple cream cheese, however, I spread that on the tortillas, and placed the crushed pineapple on top of that rather than mixing the two in a spread. To combat the fear of soggy tortillas, I drained the pineapple in a collander, then spread it out on paper towels and gently blotted everything to soak up more juice. To really hold everything together, I made them a day ahead and refridgerated overnight. They were still bland though, but not bad. Thanks.

Italian Sausage Jambalaya

This was delicious! I didn't use the Bob Evans brand sausage either because the store I stopped at didn't have it. I did use hot italian sausage for a "kick," and I'm glad I did, because I think it really pulled the whole dish together. This is a keeper for sure.

Chili Mac, Mexican Style

This was really good! I omitted the mexican oregano since I couldn't find any, the black beans since I don't care for them, and the salt since the chorizo has plenty already. I added 1 seeded, chopped jalapeno for an added kick. My first experience with chorizo sausage and I gotta say, it is really delicious. Good stuff, thank you for the recipe.

Carrots with Dried Cherries

I love carrots, but I thought this would be a nice change from the ordinary. I used Craisins instead of dried cherries, but I still found this dish too sweet. I think next time I'll cut back on the amount of honey. Though I agree, for the carrot haters, I think this dish would appeal to them.

Artichoke Pasta Salad

Good stuff, the ladies in my office at work devoured it. I subbed the black olives for manzanilla olives since that's what I had on hand, and dry parsley flakes instead of fresh. A nice change from the standard pasta salad.
