A coworker requested me to make a sweet treat for Valentine's Day, and since I can't bake, I scrambled to find something foolproof. This recipe seemed easy enough, so I gave it a go. I think next time I'll add a bit more milk to the batter, because mine was very thick and I had a hard time getting it into the muffin cups. Not pourable at all. Also, we don't have muffin pans, but I guess it was tart pans I used (I know nothing about bakeware!) So I ended up with 24 lil' mini muffins. My coworker was thrilled with the results, I however have mixed feelings about them. They do have a slight cornbread taste to them, which I wasn't crazy about. Overall, this is a good recipe to use as a jumping off point to be creative with. Thanks.
