Hot Dogs 'n' Rice

Reviewed: Jan. 15, 2008
This is like a economical version of jambalaya; but that isn't a bad thing. It's convenient because it uses ingredients that are on hand. I used minute rice though, because that's all I had on hand so my cooking time was considerably less. For a quick lunch, this fit the bill. Thanks for the recipe.

Cheesecake Dip

Reviewed: Jan. 15, 2008
I hate to agree with Tracy, but my dip was very runny, too. The only modification I made was I used 3 oz. of cream cheese instead of the Neufchatel. The taste was there, it just wasn't very dip-like.

Mississippi Hot Caviar

Reviewed: Jan. 9, 2008
I don't know what to make of this. For some reason, the Italian dressing throws everything off. It completely hides the flavors of the peppers and onions. The amount of beans is excessive, I think, 2 cans would be more than enough. If I were to make this again, I'd double the amount of jalapeno, or perhaps use a serrano pepper instead, and add a teaspoon of cumin. I won't be making this again, but it was nice to try something different.

Ham and Pineapple Pinwheels

Reviewed: Jan. 8, 2008
Yum! I actually found the pineapple cream cheese, however, I spread that on the tortillas, and placed the crushed pineapple on top of that rather than mixing the two in a spread. To combat the fear of soggy tortillas, I drained the pineapple in a collander, then spread it out on paper towels and gently blotted everything to soak up more juice. To really hold everything together, I made them a day ahead and refridgerated overnight. They were still bland though, but not bad. Thanks.

Italian Sausage Jambalaya

Reviewed: Jan. 8, 2008
This was delicious! I didn't use the Bob Evans brand sausage either because the store I stopped at didn't have it. I did use hot italian sausage for a "kick," and I'm glad I did, because I think it really pulled the whole dish together. This is a keeper for sure.

Chili Mac, Mexican Style

Reviewed: Jan. 5, 2008
This was really good! I omitted the mexican oregano since I couldn't find any, the black beans since I don't care for them, and the salt since the chorizo has plenty already. I added 1 seeded, chopped jalapeno for an added kick. My first experience with chorizo sausage and I gotta say, it is really delicious. Good stuff, thank you for the recipe.

Carrots with Dried Cherries

Reviewed: Jan. 3, 2008
I love carrots, but I thought this would be a nice change from the ordinary. I used Craisins instead of dried cherries, but I still found this dish too sweet. I think next time I'll cut back on the amount of honey. Though I agree, for the carrot haters, I think this dish would appeal to them.

Artichoke Pasta Salad

Reviewed: Jan. 3, 2008
Good stuff, the ladies in my office at work devoured it. I subbed the black olives for manzanilla olives since that's what I had on hand, and dry parsley flakes instead of fresh. A nice change from the standard pasta salad.

Pittsburgh Football Party Cilantro Salsa

Reviewed: Dec. 27, 2007
I love salsa, so waiting 8 hours to eat this was out of the question. I compromised by putting most in the fridge, and left a small sample to try out. And wow, is this stuff good! Being a huge cilantro fan, this recipe was right up my alley. I can only imagine how great this will taste tomorrow. I'm tempted to eat this with a spoon, it's that good. Great recipe!

Mean Woman Pasta

Reviewed: Dec. 25, 2007
I've been wanting to try this recipe out for weeks but didn't have many of the ingredients on hand. I still had to substitute a couple of ingredients, though (manzanilla olives in place of the kalamatas, and halved grape tomatoes since I had those on hand.) I did not make the dressing ahead of time, it was eaten immediately. A wonderful last minute, thrown together dinner. Thank you!

Party Pinwheels

Reviewed: Dec. 18, 2007
I made these for my holiday party and they flew off the plate! People were even fighting over the last one; makes me wish I had doubled the recipe. This is a keeper, no doubt about it! Thank you very much for the post.

Omelet in a Mug

Reviewed: Dec. 18, 2007
What a great idea! No mess, no fuss, it's perfect for a quick breakfast on the run. I left out the ham since I didn't have any on hand and I added some chopped green onion and red pepper flakes for a bit of a kick. Thank you for sharing, Susan!

Great tasting and super easy to make, what's not to love? I used the microwave version since I wanted a quick dip to munch on while at work. It is wonderful, thank you!

Ramen Noodle Salad

Reviewed: Dec. 13, 2007
This is wonderful! At first, I was unsure how this would come out, but it's great! I omitted the peas since I don't care for them, but otherwise followed the recipe exactly. This is a keeper for sure, thank you! *12/26/07* I made this again today, and this time added bacon bits and dill weed as other reviewers suggested. These additions are a nice touch to the orginal recipe. Give it a try.

Really good. I served this cold since I made it a day ahead, but it was still very tasty. I love the fresh basil dressing!

Crunchy Kraut Salad

Reviewed: Dec. 11, 2007
I've made a few variations of this kraut salad. I omitted the celery seed as I didn't have any on hand, so I used a bit of mustard seed and caraway seed. I also added some chopped pimento for a bit of color. I made this two days ahead of time, but I sampled it both the day I made it and two days later. Both taste wonderful, but the flavors really come out after a day or so. Thanks for the recipe.

Garden Tomato Salsa

Reviewed: Dec. 4, 2007
I had never heard of using red wine vinegar in salsa (at least in the recipes on this site) but it really makes this recipe work! I used extra jarred hot jalapeno slices since that's all I had on hand. Great salsa!

Cherry Tomato Salad

Reviewed: Dec. 4, 2007
Really, really good, and easy to make. When toasting the pine nuts, I threw in some sesame seeds and toasted those too. My coworkers enjoyed it and several requested the recipe. I'll be making this one again, thank you.
