Delicious Egg Salad for Sandwiches

I am also hopping on the "gotta use up easter eggs" bandwagon with this recipe. I love egg salad sandwiches, and this recipe is pretty good, except being a huge fan of dried dill weed, I had to add a generous amount (a little over a tablespoon's worth) to my mixture. I also omitted the salt and pepper. Thanks wifeyluvs2cook.

Six Can Chicken Tortilla Soup

Economical and tasty! I took a few of the suggestions into account, and added about 1 tbsp of cumin, 2 tbsp of chopped cilantro, 1 tbsp of chili powder, and a tsp of garlic powder. Oh, make sure you rinse the beans really well so your soup doesn't turn gray! Instead of canned chicken, I used precut, precooked chicken (It was on sale for 79 cents for 10 oz due to the fact it had to be sold the next day). Also, I used 1 can of cream of chicken soup, and 1 can of broth, as opposed to the two cans of broth. I topped it all off with Mexican style shredded cheese. With these changes and additions, this soup is amazing! Even my stepmother raved and asked for the recipe. Thank you!

Poblano Chile Pepper Soup

I scaled this down to 2 servings, but I used 2 peppers instead of 3 because the peppers I bought were very large. Our oven doeesn't have a broiler, so I did what another reviewer said, and roasted the peppers over my gas stove top, which worked nicely. Poblano peppers are not very spicy to begin with, they are a step above bell peppers in regards to heat. However, when you roast any pepper over a flame, the flavor is intensified, so it does seem to have more spice. I enjoyed this soup, I love the taste. I did not add the salt (I don't like a lot of salt in my food), but I wish I had added a dollop of sour cream, as others suggested. I'll give that a try next time. Thanks, MARBALET.

Fried Egg Sandwich

This was good! I took JUSTCYN's idea and tried this one in the microwave, for convenience sake. I sprayed PAM inside a small, square tupperware container, and added the pepper to the egg mixture (I left out the salt, I'm not big on it). This method worked like a charm. From start to finish, I had my sandwich in about three minutes. This is a keeper, no doubt. Perfect for the mornings I'm in a rush and need something quick before class. Not to mention I won't be spending time/money in the McDonald's drive-thru twice a week. Thank you!

Red Bean Salad with Feta and Peppers

Yum! This is a really good salad, and I'm not a kidney bean fan to begin with. The only single change I made was using dried parsley instead of fresh (it is what I had on hand). I let this one sit over night, and it tasted great. Thanks for the recipe.

Buffalo Style Chicken Pizza

Really good! A nice change up from the ordinary pepperoni or sausage pizza. I was a bit skeptical with the dressing, since I've never been a fan of blue cheese. But I found with the combinations of other flavors, it is perfect. I used double the amount of hot sauce (the hotter the better is my motto). Great recipe.

Very refreshing salad. I had to use dried dill and parsley since I had that on hand, and I left out the salt since the olives were plenty salty as it is.

Tom's Crunchy Salad

I'm not a big salad eater, but once in a while I'll get a craving for one. Today was one of those days. I had to use alfalfa sprouts since the store I stopped at didn't have bean sprouts, but otherwise I made as written. This is a decent crunchy salad. Thanks.

Italian Taco Salad

Pretty good as a base recipe. I did add hot taco seasoning to the ground beef. For the cheese, I only used two cups instead of four, and I used Mexican shredded cheese. Next time I think I'd add chopped tomato as other reviewers suggested.

Egg Salad Sandwiches

As a kid, I would never touch an egg salad sandwich. Now that I'm older, I've found myself to be quite a fan of them. I made my sandwich exactly, but I left out the mustard powder because I didn't have any. However, I'll be picking some up because I'm sure I'll be making this sandwich often. Great tasting and easy, thanks!

Man is this good! The flavors meld together better than I expected. I followed everything as written, but I did add about a third of a bunch of chopped fresh cilantro. Delicious, I'll be making this again and again I'm sure! Thanks.

Chocolate Chip Muffins

A coworker requested me to make a sweet treat for Valentine's Day, and since I can't bake, I scrambled to find something foolproof. This recipe seemed easy enough, so I gave it a go. I think next time I'll add a bit more milk to the batter, because mine was very thick and I had a hard time getting it into the muffin cups. Not pourable at all. Also, we don't have muffin pans, but I guess it was tart pans I used (I know nothing about bakeware!) So I ended up with 24 lil' mini muffins. My coworker was thrilled with the results, I however have mixed feelings about them. They do have a slight cornbread taste to them, which I wasn't crazy about. Overall, this is a good recipe to use as a jumping off point to be creative with. Thanks.

This was interesting, but good! I left out the shrimp, as I don't care for seafood, and with corn being out of season, I had to use frozen cobs. I also threw in some chopped onion. I'll make this again, thank you!

Mini Ham And Cheese Rolls

Yum, these are tasty! I used sesame seeds in place of the poppy seeds since that's what I had on hand. Instead of drizzling the mixture on top of the rolls, I brushed it on using a pastry brush, which helped cover everything evenly. Thanks for the recipe.

Andouille and Chicken Creole Pasta

This wasn't bad. I followed the recipe exactly, except I left out the mushrooms, as I don't care for them. I even tried the suggestion of adding a bit of cayenne pepper. The amount of spice was perfect, however, I'm not sure if I cared for the sauce in general. It reminded me of gravy, but I suppose that is because of it's color. Also, where do the 2 tablespoons of margarine come in to play? I'm guessing when you cook the sausage and chicken, but the recipe doesn't say. Not sure if I'd make this one again, but it was a nice way to spruce up the ol' linguine.

Peppered Cilantro Rice

I like this rice, but I thought it was a bit bland. Next time I would add a bit of seasoning, maybe some cumin? It does need a little something though, I just can't put my finger on it. Thanks for the recipe.

Creamy Pepper Jack Cheese Soup

Great soup! The only change was I used dried, minced onion, about 2 tablespoons worth. My soup wasn't as creamy as I would like, so next time I would probably use 1.5 cups of milk instead of 2 cups. This soup is perfect on a cold, windy Chicago day. Thanks Austin!

Broccoli and Ramen Noodle Salad

This salad is wonderful! I followed the recipe exactly, but after reading other reviews, I made (quite a few) additions. I added sesame oil, dried cranberries, a teaspoon of mild giardiniera, chopped parsley, toasted sesame seeds, a teaspoon of minced garlic, half a teaspoon of mustard seed, and a dash of soy sauce. Thank you for the recipe.

Pasta with Kielbasa and Sauerkraut

What a flavorful dish! I really enjoyed this different take on pasta. I used Penne pasta since I had it on hand, and regular mustard because that's all I had. And, I'm not a wine drinker, so I had to omit the white wine as well. Regardless, this turned out well, and it tastes great the next day too. Thanks!
