Ramen Noodle Stir-Fry

Another no fail way to jazz up those economical Ramen noodles. I followed the recipe to the letter, but eyeballed the seasoning and soy sauce. Also, instead of chicken broth, I just added the packet of seasonings from the ramen package to a cup of hot water for convenience sake. Great quick meal, thanks!

Cilantro-Lime Rice

Compared to "that burrito place" (which I frequent at LEAST once a week), this comes close, but not enough for me to use as a substitute for my "burrito place's" rice fix. I wanted to leave the chicken bouillon out, but I always make my recipes as-is (or as close as I can) on the first run through. To anyone who is skeptical: leave it out, or cut the amount in half. I've tried another recipe with much better results, Google "Chipotle Copycat Lime Rice."

Pasta Salad II

I never would have thought it was the Old Bay that pulled this pasta salad together. I made this a day ahead, and by the next day, all the flavors melded together perfectly. Quick, simple ingredients, and tasty; you can bet I'm keeping this one. Thank you!

Cilantro Egg Salad

I love the addition of cilantro (I'm a cilantro junkie) so of course I added a bit more than called for. I also omitted the mushrooms and salt (personal preference). A fun twist on the traditional egg salad, thanks.

Bacon 'N' Egg Tacos

Really good, and so versatile. You can add anything to this; chopped bell peppers, jalapeno slices, minced garlic, chopped tomato, etc. There's no limit to how creative you can be with these. I didn't have bacon on hand, so I cooked up some sausage and used that instead. I don't eat breakfast often, but when I do, this will be a favorite. Thanks.

Chicken with Tomatillos and Poblanos

I LOVED this! I'd give it five stars, except I had to make modifications. I used dried cilantro in place of the fresh, a Cubanelle pepper in place of the Anaheims (the store didn't have any), pre-cooked deli fresh diced chicken (which allowed me to skip most of the third step, which drastically cut down cooking time), a pinch of red pepper flakes since I was out of cayenne, and I did add two serrano peppers for an added kick. I served this over white rice, and it was plenty filling. My father even managed to sneak away with the little bit of leftovers I had. I plan on making this again and again, thank you so much, Suzanne!

Cheese Ravioli with Three Pepper Topping

Yummy! This recipe is wonderful, I didn't change a single thing. Actually, I take that back, I used a little less broth than called for, but that is all. The amount of spice was perfect for me, too. I'll be making this again, thank you!

Kielbasa with Peppers and Potatoes

This was delicious! I followed the recipe as written, however I did used canned, diced potatoes for convenience. Next time, I think I'll add some red pepper flakes and minced garlic. This is a keeper, thank you!

Artichoke and Roasted Red Pepper Dip

Not bad, though I didn't have a leek or green onions, so I had to use a small white onion. I don't recommend doing so, the onion slightly overpowered all the other flavors. That is my fault though, not the recipe's. Thanks.

Carrot Chile and Cilantro Soup

When it comes to making homemade soups, my biggest problem is getting the darn thing smooth enough! Mine had the consistency of a salsa- slighty smooth, slighty chunky. Regardless, this is still a good soup. I was a bit spice crazy, and used (a lot) more chile paste than stated, probably about 3 tablespoons worth (good thing I can stand the heat). I also used a lot more cilantro, beef broth instead of vegetable (it is what I had) and had to omit the potatoes (didn't have any on hand). Definitely worth making again, and hopefully I'll learn the secret to getting a smooth soup. Thank you DONOGHUEJ!

Antipasto Pasta Salad

This is a great pasta salad! I used Cotto salami, because the Genoa salami was rather expensive, and Asadero cheese since I couldn't find Asiago. (I know, I know, it isn't the same). Otherwise, I did not change a thing. Thank you!

Bell Peppers and Pasta

Good stuff! I followed everything exactly, however I did use rotini pasta, as that is what was on hand. Oh, and I used a bit more cayenne pepper, and omitted the salt (love spice, hate salt). Great recipe, thank you.

Caribbean-Style Sofrito

Authentic or not, I am a huge pepper, cilantro, and tomatillo fan. That being said, I whipped this up for an afternoon snack. I did scale it down from 96 to 24, seeing as I was the only one eating it, and other reviewers stated the original amount makes quite a bit. I'm glad I did. I served this over white rice (tasty!) and also used some as a salsa for tortilla chips (perfect mild "salsa"). Great recipe, thanks.

Dorm Room Chili Mac

As a college student, I fully appreciate quick and inexpensive meals. This one is a winner because it combines chili and mac and cheese, two items I always have on hand. Like another reviewer, I too used Campbell Chunky Firehouse chili, since I love spicy chili, and for the shredded cheese topping, I used a Mexican blend. Good stuff, thanks!

Grilled Roasted Red Pepper and Ham Sandwich

Yum, what a tasty sandwich! I didn't use the parmesan cheese, but I don't think that makes much of a difference. I was also surprised that just one was pretty darn filling, which is nice because normally I have to eat two grilled cheeses before I feel full. Normally I don't have the ingredients on hand (the roasted red peppers, the provolone, sourdough bread), so this won't become a staple in my house, but it was nice to try something different. Thanks!

Salsa Rice

I can't help but laugh at this recipe; I used to make this all the time when I was fourteen as a "snack." Imagine my surprise when I stumbled upon it here on AR. In a pinch, it is not a bad substitute for Spanish rice, though it's a bit bland for my liking.

Fried Green Tomato Sandwich

Ohhhh man, this is heavenly! The only reason I didn't give it five stars? The store I stopped at didn't have any more green tomatoes :( So I had to use red, and of course, it is not even close to the same thing. (I've had FGT before, so I know the taste very well). I'm going to try a few other grocery stores and see if I can give this another go with green tomatoes next time. I gotta say, this is a great sandwich, I love the combination of the pepperjack cheese, the jalapeno slices, and the fried tomato! Thank you!
