Tangy Cucumber and Avocado Salad

What a delightful summer dish! The lemon and lime really play up the avocado and cucumber's flavors. I especially love the green onions in there. I followed the recipe exactly, but like in anything I make, I left out the salt. Well done, Jessie!

Southwestern Pasta Salad

I liked this, but I felt as though it needed something. I followed the recipe to the letter, so I'm not sure what went wrong. I even added a diced, seeded jalapeno pepper. I'll see if the taste improves by the morning, as others have confirmed it does taste better the next day.

Spicy Pasta

Tasty! I used Campanelle shaped pasta since I had it on hand, and red chile powder because I didn't have the chile peppers. Same thing, really. I didn't season with salt and pepper, but the end result has quite a bit of flavor, so I didn't miss it. Great last minute meal idea using convenient staple items, thank you!

Tortilla Rollups IV

Not bad. I used jalapeno cheddar tortillas, and added chopped black olives, diced mild green chiles, and mexican blend cheese instead of the cheddar. I made ahead of time, and my tortillas were a bit soggy the next day, but not terribly bad. My coworkers seemed to enjoy them, as did I. Thanks!

Fiesta Scrambled Eggs

This was fabulous. I've made many variations of this, but the balance of ingredients in this recipe is perfect. I used jarred jalapenos, as it is what I had on hand, and omitted the salt, of course. I did add a bit of minced garlic, too. I couldn't serve with the salsa since I didn't have any at the time, otherwise I would have given this 5 stars. Thank you!

Avocado and Cilantro Soup

I love avocados and cilantro, so I figured this would be a good soup to try. I'm not sure what I did wrong though, because it came out tasting very salty! I don't add salt to taste on my food, so I'm not sure how it happened. Oh well, it was a good way for me to use up avocados that I needed to get rid of, thanks.

Garlic Penne Pasta

I am so grateful I stumbled across this recipe. My first attempt at dinner failed, and I didn't have a backup plan (nor a lot of food left in the house). This lil' baby came to the rescue. My only changes were instead of sun-dried tomatoes, I used grape tomatoes, which I cut into quarters, and Campanelle (pasta that is shaped like a little bell). I eyeballed the seasonings, as well as the pasta, since I was just making 1 serving. Everything worked out nicely. Thank you for posting, Taliesen.

Swan's Summer Soup

I was a bit disappointed by how bland this turned out. Like someone else said, it tastes like just a bunch of ingredients thrown together. I used prepared tomato juice since I don't have a juice extractor and I didn't have corn on hand, so I threw in a bit of chopped bell pepper. After reading a few more reviews, I threw in a dash or two of celery salt, and some hot sauce. I guess cold soup is an acquired taste, because I couldn't even finish a bowl of it. :(

Tail Burner Firehouse French Fries

Watching the Crosstown Classics with my White Sox playing the Cubs today, I was in total junk food mode. Chips, salsa, hot dogs...and now, french fries. I love french fries, and I love spice. This recipe had my name written all over it. Being a "struggling" college kid, I had Ore-Ida Extra Crispy Easy Fries on hand, so I sprinkled the seasonings on the fries, and popped those babies in the microwave. 4 minutes later, I had a nice batch of spicy, spicy fries, which I dipped in sour cream on the side. Great idea, EMTCARO2, thank you!

BLT Wraps

I just bought some of that Oscar Mayer fully cooked ready to serve bacon, (nuke it for 30 seconds and waa-laa! Bacon!) so I thought I'd try these wraps out. They are delicious! Like others, I too added a bit of ranch dressing to mine. I don't eat wraps often, but I think this recipe will be added to my "essentials" collection. Thanks so much!

Egg Drop Soup (Better than Restaurant Quality!)

On a hot summer day, the last thing I expected to make tonight was soup. However, the craving fought long and hard and I finally gave in. I found myself searching AR for something quick, and with ingredients I had on hand. Presto, this was perfect. I did have to make a few adjustments, though. I didn't have broth on hand, so I threw 2 chicken bouillon cubes into a cup of hot water. I omitted the food coloring, and the salt. The bouillon cubes + soy sauce= enough sodium already! Also, instead of chives, I chopped up some green onion. Now if only I had some potstickers and fried rice...

Hot Dog Roll Up

After an extremely busy day at work, I needed to scarf something down ASAP just to get something in my stomach. This fit the bill perfectly- super fast, tasty, and filling (I had two). This is a keeper for the emergency "gotta eat something NOW" days. Thanks.

Italian Rice Balls

Well, I don't know what went wrong with this recipe. I followed it as written, but my results were hardly worth a picture (though I took one anyway). They fell apart while frying, and my end result was 8 little balls that survived. Not impressive. The taste was rather bland, and I'm disappointed I wasted a good amount of olive oil to fry these. Sorry for the poor review, but I do not recommend this recipe. I'm sorry.

Ramen Noodle Stir-Fry

Another no fail way to jazz up those economical Ramen noodles. I followed the recipe to the letter, but eyeballed the seasoning and soy sauce. Also, instead of chicken broth, I just added the packet of seasonings from the ramen package to a cup of hot water for convenience sake. Great quick meal, thanks!

Cilantro-Lime Rice

Compared to "that burrito place" (which I frequent at LEAST once a week), this comes close, but not enough for me to use as a substitute for my "burrito place's" rice fix. I wanted to leave the chicken bouillon out, but I always make my recipes as-is (or as close as I can) on the first run through. To anyone who is skeptical: leave it out, or cut the amount in half. I've tried another recipe with much better results, Google "Chipotle Copycat Lime Rice."

Pasta Salad II

I never would have thought it was the Old Bay that pulled this pasta salad together. I made this a day ahead, and by the next day, all the flavors melded together perfectly. Quick, simple ingredients, and tasty; you can bet I'm keeping this one. Thank you!
