Mango Salsa

This was really good, I made it for a Margaritaville themed birthday party and it was well received. However, I would have doubled or tripled the recipe, because there was hardly enough to go around. For my first time cutting up a mango, I found it to be a bit time consuming (and slippery). I'd make this again, though.

Buffalo Chicken Wing Soup

I didn't think I'd get around to this recipe until fall or winter, but here I am in Chicago, where apparently mother nature is very confused which season it's supposed to be! I was definitely craving some soup and this recipe fit the bill; quick, easy preparation, and delicious! I made this on the stove top for convenience sake, simmering on medium-low for about 20 minutes. I did add a lot of hot pepper sauce (like I said, I love it hot!) and because it was just me eating this, I eyeballed the ingredients and adjusting the quantity as necessary. Great job Pat, this will definitely be in my regular rotation! (Once it becomes BEARS season though). :) Thanks!

Crab Ceviche

This was really good, however I think if you cut back to just one lime, it would be perfect. 2 limes seem to overpower all the other flavors. I'll be making this again, thank you.

Fried Mac and Cheese Balls

I was hoping these would taste like Arby's Mac & Cheesers (I hope they bring those back!) but they didn't really. They were just okay, I don't know. I guess I just set high expectations for this recipe. They are quite time consuming to make, and just not worth the final product. Sorry for the poor review.

Oh my, how delicious! I left out the egg and milk, and just used the pancake mix. Not the prettiest end result, but that doesn't matter because they disappear FAST. Thanks for this sinful, fabulous treat!

Green Banana Fries

This recipe was so intriguing; I just had to try them out. It's funny, the whole time they're frying, you're anticipating a good, crispy french fry. Then you taste it, and are surprised by the mild banana taste. My coworkers are dieting and they haven't had french fries in over two months, but I bet they would appreciate this recipe. I'll be passing this one onto my health-conscious friends, thanks!

I wish I could rate this higher, but I thought these were bland. I even added chopped cilantro, but that didn't help much. If I were going to make these again, I'd have to add more to the filling.

Gator Salsa

This recipe was plenty hot, and it has potential. I've had success with low rated recipes in the past, so I was hopeful I could make this one work. However, it was very bland. Boiling the peppers and onions kills the flavors, and everything turns into a mushy mess. Not to mention all the added water was a disaster, I had to strain it three or four times to "dry" it out a bit. I managed to save it by throwing some lime juice over it, but I won't be making this again, sorry.

This was quite delicious! I added a bit more cilantro than called for, but that is just a personal preference. This would be fabulous if you threw in some chorizo sausage. Yum!!

Fabulous Fajitas

These were quick, but hardly fabulous. I did not care for the Italian dressing at all. Italian dressing? Hello, where's the pico de gallo, cilantro, and lime flavor? I only made this because I had all the ingredients on hand. I did use pita bread, which was a little different (but hardly authentic). I won't be making this again, sorry.

Death By Garlic

Alright, I haven't grocery shopped in a while, so I needed something to make where I had the ingredients on hand. This dish was perfect. I used dried parsley as I didn't have any fresh, seashell pasta instead of penne, and I didn't have the cheese, so my pasta was naked. But the end result was perfect. I will definitely be making this again (with cheese and probably a meat product, too). Thank you!

Pita Pizzas

These were okay. I left out the beans (I didn't have any on hand), and added a couple slices of jalapeno. They are a bit difficult to eat, since all the ingredients weigh down on the pitas. The only way to get through them is with a fork and knife.

I thought this was really good! It is so simple to throw together for a quick, light meal. I've never had anything like this before, so I can't really compare it to anything else. I did feel like it was missing something, but I'd still make this again. Thanks.

Grilled Okra Salad

What a good salad. I had to use frozen okra pods, since okra isn't in season anymore, and I "grilled" them on the stovetop, since my grill is covered in 8 inches of snow. I oiled my skillet and grilled the pods over medium-high heat. It still worked out pretty well. Thanks for the recipe.
