Acapulco Chicken

So delicious! I added chopped green onion, and a little splash of lime juice all served over a bed of white rice. Oh, and I had to substitute the tomato for a can of diced, as I didn't have a fresh one on hand. So quick and filling, thanks Lorrie!

I LOVE these! I added carrots, left out the mushrooms, and added extra bell peppers. I made them in the oven; 375 degrees for an hour and they were perfect.

Muffin Frittatas

These were soooo good! I made mini-muffins, and added chopped sausage, diced tri-color bell peppers, and green onion slivers. I omitted the salt, zucchini, and cheddar cheese (but subbed a southwest cheese blend). I ended up with two dozen mini-muffins, and I'm embarrassed to say that I just ate 1 dozen in one sitting. I'll be making these again and again.

These are delicious! Mine didn't turn out very pretty, but they tasted wonderful! I used red velvet cake, vanilla frosting, and melted Tollhouse morsels for the coating.

Rice and Hot Dogs Soup

Not bad for a quick, cheap meal. I left out the chicken bouillon and turmeric, as I didn't have any on hand. I used instant rice and the diced tomatoes instead of tomato paste (what I had). Thanks, Mika.

Peanut butter and Pickle Sandwich

It sounds crazy, but it's not bad. I used pre-sliced bread & butter pickles, which didn't taste too great. Use a fresh dill pickle as stated for the best results. Don't knock it until you try it, thanks Rachel for the unique idea.

This was tasty. I omitted the celery because I didn't have any, and had to use a white onion because it's what was on hand. I also left out the salt, as I don't care for additional salt in my food.

Simple Arrabbiata Sauce

Mmmm, so delicious. I've been craving a good, spicy pasta dish for a while now, and this dish fit the bill. Not only is it economical, but it is filling, and you can control how spicy it is according to your tastes. I found that by using extra garlic, salt and pepper, and the basil helps reduce the "metallic taste" from the canned tomatoes. Thanks for the quick, easy recipe, ROgg.

Restaurant-Style Buffalo Chicken Wings

These did NOT work out for me. The sauce was a mixture of an oily/chunky mess, and there certainly wasn't enough to coat the wings. I won't be trying this again, but thanks Kelly.

Okra Fritters

I have no idea what happened, but these were a failure. They fell apart while frying, but on the plus side, I love the incorporation of tomato in this. I've made variations of fritters before, but never with tomato. I might try this again sometime, thanks.

Classic Pizza Margherita

One of my favorite pizza styles, however I didn't use the pesto & basil combo. I instead sprinkled the crust with red pepper flakes, then layered the cheese, the tomato slices, the fresh chopped basil, and a little more cheese on top. Now THAT'S pizza margherita!

Grilled Okra

I only had pre-sliced okra, but it worked out well. I used Tony Chachere's original creole seasoning as well. You may want to sprinkle the seasoning, as another reviewer said, rolling the okra around in in makes it too strong. I made that mistake as well, so next time I will sprinkle the seasoning instead.

This was SO good. The only changes I made were using dried basil instead of fresh, and I had to make my own broth since I didn't have any. But it turned out fabulous. The amount of spice was perfect for me. I'll be making this again and again, thank you DEBNJAMES~!

Guacamole

Well, I thought this had very little flavor, however the roomies ate it all, so I'll give it a three out of five stars. I'm not sure what went wrong, I mean, you can't really screw up guacamole! I'll probably try this another time and hopefully taste better results.
