I just turned the dirty 30, and unfortunately haven't been able to cook as much due to budget constraints/economy. I see a lot of ramen noodles in my future....

Kalamata Olive Tapenade
Not bad. I used fresh cilantro as I didn't have parsley, omitted the salt, and added some green greek olives with roasted red peppers. As others said, it was very salty but I figured the bf wouldn't mind, as he loves salt. I mixed the tapenade with some pasta sauce and served over rotini. It was good but I don't think I'd make it again, as the bf didn't care for it and there's no way I could eat an entire batch by myself.

Hearty Creole Okra and Tomatoes
This was sooo good! I omitted the butter and salt, and kept the andouille sliced instead of diced. I also used a little less corn (I only had canned), since I'm not a huge fan.

Mexican Orzo Salad
I halved the amount of orzo, and also added a can of Great Northern Beans. I used half of the amount of corn and had to use dried cilantro (all I had). I omitted the salt, and added cumin, dried red pepper powder, and garlic powder. For those of you looking for more flavor, definitely add cumin and chili powder (I was out of the chili powder unfortunately). If all else fails, throw in an envelope of taco seasoning! I can't wait to taste this one (only 1 hour and 43 minutes to go, minimum....). Thanks for the recipe!
