Chicken Fried Chicken

Never having made fried chicken before, I've got to say this was an easy and delicious recipe. Like others, I added more seasonings to my batter. I added "Garlic Garlic" from Tastefully Simple, about 1 tsp of Paprika and an All-Purpose season blend. It turned out wonderful. I also used chicken breast strips instead of whole chicken breasts because they were on sale at my grocery store. Will definitely be making this again.

Quinoa and Black Beans

This was excellent!! So easy and so yummy. Like others, I omitted one can of black beans and just upped the amount of corn. I used this as a side dish to Chipotle Marinated chicken skewers with veggies and it was perfect. If I was using this as a main dish, I would definitely keep the 2nd can of black beans for the protein. I also omitted the cayenne since I was serving this to my kids. Instead I used about a teaspoon of Chili powder.

Vegetable Pasta Salad

This was a good basic pasta salad recipe. I made this for my child's school picnic so I omitted the ham and used a shredded Mexican cheese blend as I didn't have any cubed on hand. You can pretty much add any veggies you want. I also used edamame and corn instead of peas and broccoli. The dressing has a nice tang to it. Next time I might add a little sugar to it as well.

Slow Cooker Chicken and Dumplings

This was a great basic starter recipe. Like other reviewers, I added some spices (garlic powder, ground pepper, salt, Italian seasoning and cumin). I also used chicken broth instead of water to cover the chicken mixture. And I only used one can of biscuits, two seemed like it may be too much. Lastly, I added half a bag of frozen mixed veggies in. Everyone in my house enjoyed it. This will become a mainstay in my dinner rotation.

Half Time Hoisin Chicken Wings

I made this recipe exactly as stated, only I used drumsticks and thighs since I didn't have wings. This was very tasty. I also dialed down the chile sauce for my kids, but if it were for just me and my husband I would have added exactly what was indicated in the recipe. It helps if you turn up your oven the last 10 minutes of cooking to "crisp" up the skin.

Garlic Chicken Fried Chicken

I made the breading exactly as originally written (2 tbsp of powdered garlic). I double battered the chicken and did chicken strips instead of cutlets. I warmed the oven to 350 and put almost done chicken in pan in oven until all the pieces were done. This was very tasty and the chicken was very moist. I served with a leafy green salad and butter noodles. Definitely will make again.

Jo's Rosemary Bread

So so so yummy! I baked this bread in the oven instead of bread machine and it was wonderful. Most of the loaf was gone by dinner! Definitely mix olive oil and fresh ground pepper to dip this bread in.

Slow-Cooker Chicken Tortilla Soup

I have made this soup several times and it has always turned out delicious! So easy. Like other reviewers, I added raw chicken breasts in at the beginning and about an hour before serving, I take them out, shred them and add back in. So good, especially with a splash of lime juice and a sprinkle of Cheddar cheese.

Chicken Stock

Great basic stock recipe. I use it all the time. Especially in the winter when I can make it and then take it out on our deck and let it cool out there. That way no refrigerator space is taken with the huge pot!

Chocolate Chip Banana Muffins

Awesome muffins. My kids loved these. Great recipe for having your kids help you out too. My daughter stirred the batter while my son mashed the bananas. They were so proud of themselves for making such yummy treats.

Peanut Butter and Banana French Toast

I made this for my kids this morning and even my picky eater scarfed this down. Only thing I did differently was add Apple Pie Spice to the egg and vanilla mixture and I topped with powdered sugar.

Lemon Bundt Cake

Very yummy cake. I didn't have Sprite or Sierra Mist, but I did have Mountain Dew and it turned out just fine. I took others' advice and glazed the cake with a powdered sugar/lemon juice glaze and it was great. Definitely needs more than 35 minutes in the oven. I just kept checking it every 5 - 7 minutes until the batter was set and toothpick came out clean. Next time I might try adding blueberries to the batter for a more summertime seasonal cake.

Chickpea and Couscous Delight

This was a nice and simple recipe. I added a bit more olive oil and vinegar for more of a punch. I also added sliced red onions to bulk up the veggies. I will definitely make this again.

Spintz Cake

YUMMY!!! I made this cake for my husband's birthday and it was a huge hit. He is a chocolate cake freak and loves anything that combines peanut butter and chocolate. This cake was super moist and gone sooooo fast! I used a little extra peanut butter to satisfy my husband's craving. I also sprinkled toffee bits in between the layers for a little extra something. I will definitely be making this again.
