Bacon Cheese Puffs

I'm surprised these are getting such rave reviews??? Not a crowd pleaser in my home, and followed recipe closely. Will probably not make these again.

Blue Cheese Potato Salad

Reviewed: Jul. 20, 2009
Delicious! FYI--this is not a dish to make ahead of time. It is best served immediately. Really isn't very good left over, but GREAT when first made!

Strawberry/Rhubarb Crumb Pie

Reviewed: May 18, 2009
On taste alone, this is a DEFINITE 5!!! However, it was pretty runny, so I am giving it a 4. (It did help when I refrigerated it). Next time I will use a little more flour or substitute cornstarch (I find it thickens better). I also added a little cinnamon to the crumb topping. DELICIOUS!!!!

Lori's Spicy Chipotle Lasagna

Reviewed: May 18, 2009
OUTSTANDING!!! The BEST lasagna I ever made--and I've made a ton of it!!! I couldn't find the chipotle chile pepper in adobo sauce anywhere (live in PA, so my "international section" at the grocery store is very limited). Anyway, I eliminated it completely and used a little chili powder and Tapatio (had this left from when I lived in San Diego). I added the chili powder and Tapatio to the meat mixture and the whole dish was AMAZING!! I'm sure if you made it with the chipotle pepper it would be even better, but that's hard to imagine. I would recommend making this in a larger pan than 9x13. Mine was overflowing. If you have a true lasagna pan, use that or you will run out of room.

Easy Slow Cooker Meatballs

Reviewed: May 1, 2009
Sauce was excellent! Used 2 large cans of Hunts Traditional tomato sauce, 1 can of Furmano's Italien crushed tomatoes, and 1 can of tomato paste. Also added a little dried basil and Italien seasoning, a can of mushrooms and a about a half cup of chopped onion. The meatballs were a little bland. I will add much more seasoning to them next time. I also baked them (as others suggested) for 15 min at 350. Didn't really make any difference b/c I used 93/7 beef (no grease). I will just throw them in the sauce uncooked next time instead of browning ahead of time. Overall, yummy.

Heavenly Potatoes and Ham

Reviewed: Apr. 23, 2009
Made this very close to the recipe, except used chopped white onion instead of green onion (b/c that's what I had on hand). It was OK. Nothing that blew my family away. Don't get me wrong, it was good, but probably won't make again.

Pepperoncini Beef

Reviewed: Apr. 22, 2009
Good. I toasted our buns ahead of time and then also melted the cheese in the oven after the sandwiches were made. It was not as spicy as I was expecting, but it was good nonetheless. Not sure if I will make again--had expected it to be bursting with flavor and it didn't.

Asparagus and Mushroom Puff Pastry Pie

Reviewed: Apr. 20, 2009
I also used regular pie crust instead of puff pastry. YUMM!! I used 2 cups of hollandaise sauce--definitely needed it. Good, but will use a little kielbasa in it next time. My 10 month old even ate it!

Laura's Unbelievable Chicken and Pasta

Reviewed: Mar. 31, 2009
Sorry. I can't figure out how this recipe keeps getting such good reviews. Even "doctoring" it up a bit with garlic didn't make it good. And we aren't picky eaters. SO BLAND. Will not make again.

Campbell's Kitchen Creamy Chicken Enchiladas

Reviewed: Jan. 7, 2009
YUMMM! We love these! I usually don't make any changes to the recipe, but sometimes I do add some black olives and some jalepenos. It just depends on what I have on hand. I make these at least once a month. ***Once I substituted ground beef for the chicken, and used cream of mushroom soup instead of cr of chicken, but it was not very good.*** Stick with chicken for the enchiladas.

Slow Cooker Italian Beef for Sandwiches

Reviewed: Dec. 19, 2008
I rate this a 4 only b/c I make several changes to the recipe that may help someone else. With my changes, it's a 5 definitely!! Instead of water, use beef broth. Add extra seasoning (garlic, oregano, Italien seasoning are all good). When serving, add pepperoni to the buns and then put the meat over it. Add sauteed onions and peppers on top of that, cover with provolone and melt in the oven. YUMMMMMM!

Battered Balsamic Fish

Reviewed: Oct. 5, 2008
My husband and I LOVED this recipe. I followed very close to the original recipe, however I used less oil and I used seasoned bread crumbs. I also couldn't find halibut, so we used cod. DELICIOUS! Thank you for sharing. We will make again. Yummm.
