Baked Flounder

This dish was good although next time I will try actually dipping the fish in the white wine/lemon then rolling it in the bread crumbs before placing it over the vegetables.

Pesto Tomatoes

These were great. I think next time I will try some with Mozz. cheese on top. Try to use tomatoes that are more firm so they didn't get mushy as they sit.

Dill Pickle Soup

I made this for company but wouldn't tell anyone the name of this soup until they tasted it. Everyone LOVED this soup, even my mom who doesn't like dill pickles. It was a big hit & I will be making it again!

Roasted Vegetables

Very good! I cut back on the Rosemary & Thyme and glad I did. This is a beautiful dish & went over very well! Made this for company & used 1 large butternut squash, 1 large sweet potato, 6 Yukon Golds, 1 red onion, 2 red bell peppers & 2 orange. Covered the squash, sweet potato, Yukons with foil & baked for 30 minutes then added the rest & did 15 min covered and 15 uncovered.

Russian Mushroom and Potato Soup

This was WONDERFUL!!!! My husband went back 3 times for more and told me we needed to have it at least once a week! I didn't notice much of a difference after adding the 1/2 & 1/2 flour mixture so I added a little sour cream. Still didn't notice a difference but I thought the taste was amazing!

Baked Potato Skins

I used some of the bacon grease instead of vegetable oil for flavor but used less than what it called for. I brushed the insides first & baked them then turned them upside down & brushed the other side & baked again so the grease could run out & they wouldn't be greasy. That worked really well. I don't know if I skipped a step or if it isn't included but I felt the potato skins could have used a dash of salt before adding the toppings. Or add more to the oil mixture to begin with. Other than that they were terrific!

Cornbread that is a Meal

Mixed reviews in my house. My 8 y.o. daughter didn't care for it, my 4 y.o. son cleaned his plate, my husband thought it was good also & I'm on the fence. I agree with others, it's missing something. I TRY to stick as close to the recipe as I can the first time around to give an honest review. If you completely change it, you aren't giving an accurate review of this recipe. We have our beef processed in pound and a half pkgs so I used more hamburger and in mixing the cornbread I felt 1 cup of milk was plenty after mixing it up. Because most of my family doesn't care for jalapenos, I omitted those. I cooked my ground beef with the onion, added quite a bit of seasoned salt and some cumin and I still felt like it was a little bland. I baked at 350 for 25 minutes. It was pretty much done so I covered it with foil, turned the oven off & let it sit in there until my husband got home, about 15 more minutes. It was done through but I think the creamed corn gives it a texture or consistancy I didn't care for. Cutting back to 1 cup of milk is probably the key to getting it done in a shorter amount of time. I think this recipe has a lot of potential, maybe use sausage, bacon & some cream cheese and have it for breakfast??? I don't know if I'll try this again unless it will just be my son & husband at home eating it.

Double Layer Pumpkin Cheesecake

I made this for Christmas Eve at the in-laws & it went before the pumpkin pie. I took some advice from others & used 3 8oz blocks of cream cheese, 1 1/4 c sugar and I used an entire small can of the pumpkin pie filling. I also folded in some sour cream & added a little extra cinnamon & nutmeg (after taste testing). I just eyeballed the cream cheese filling the pie crust about 1/2 way. Then I put the pumpkin flavor mixture on top. It ended up being about 1/2 & 1/2 which was perfect for our taste. I made a topping favorite in our house which is 1 cup brown sugar & 1 cup heavy whipping cream simmered together to thicken and let them put it on top themselves. I have some of the pumpkin flavored mixture left so today I will be making a cheesecake in a springform.....can't wait!

Sunday Best Fruit Salad

I made this for my son's 4th birthday party & it was a huge hit!!! Everyone loved it! I used 2 cans of peach pie filling, 3 cans of pineapple chunks, 6 apples, 6 bananas, strawberries, 1 lg. can of mandarin oranges and green & purple grapes. I topped with kiwi & strawberries according to recipe. It was beautiful AND delicious!!!! Thank you! The pineapple juice does an EXCELLENT job of keeping the apples & bananas from turning brown!

Dad's Asian Slaw

Great recipe! I love this stuff and had been looking for a recipe for a long time. It turned out a little sweeter than I remember but next time I'll just add a little less sugar. Awesome! UPDATE: I think I must have just gotten a big 1/2 cup the first time b/c I just made this yesterday doubling the recipe & it was perfect! I used a full cup of sugar & the entire bottle of dressing. There is one little bitty bowl left, it was wonderful! I guess I just got carried away with the sugar the first time! ;)

Bacon Popcorn

This definately got rave reviews in our house! I did add more than 8 ounces of ground beef, that just didn't seem like enough. I used green chilies instead of the green onions and flour tortilla's instead of corn. 8 tortilla's seemed like a lot so I did some in the pan like the recipe calls for & did some in the oven. Overall it was very simple & very tasty. I will definately be making this one again!

Chicken Alfredo Pizza
