Easy Slow Cooker French Dip

This was good....I used the roast it called for very leary b/c it always turns out really dry. I put it in my crockpot frozen & cooked it 2 hours less than stated & it was still dry. I sliced it thin & put it back in the juices but that didn't help much. I did fix a sandwich for my husband later & for me the next day & warmed up with some cheese melted over the top did make it more moist. Next time I will use a chuck roast or at least one that isn't such a dry roast to begin with. I did saute some mushrooms in the juice from the roast & they were EXCELLENT that way! I will definitely be making this again but not with the suggested cut of meat. Thanks for a good one!

Mini Meatloaves

This is a great base for a meatloaf. You can add different spices to suit your family. I made it as stated except our beef comes in pound & 1/2 so I used more meat. Next time I will add onions and some other spices but the texture/consistency was PERFECT! It had a great flavor, exactly what I have been looking for! I made it in mini loaves & cooked the same temp & length. The sauce was a bit sweet for mine & my husbands taste but my kids gobbled it up. I will definitely be making this again! I plan to make a batch to freeze for a quick lunch or even supper. Thanks!!!

Whiskey Marinade

This was really good & kept our meat juicy & tender. We process our own beef & ended up with some roasts that are just too dry when done in a crockpot so I cut it into chunks & let it set in the marinade for about an hour & 1/2 then I dropped the chunks into hot oil b/c it cooks them quickly & seems to keep them from drying out as well. I was worried my kids wouldn't like it but they did. We aren't big hard liquor drinkers so all we had was Jim Beam, next time I will make a point to buy Jack Daniels and try it on some steaks on the grill! Thanks for a great marinade!

Parmesan Baked Potatoes

I'm not sure if this is an honest 5...I normally make recipes as the recipe states to give an accurate review but this time I made some changes. I sliced the potatoes about 1/4 in. thick, melted the butter in my 9x13, added the parmesan cheese & per other reviews, added some garlic powder & a little garlic salt. I tossed my potatoes in & stirred them up really good to coat them and tossed them about every 10 minutes or so to ensure they were all getting covered with the butter concoction and didn't dry out (my family doesn't care for them crispy). I was running short on time so I covered them for the last 15 minutes. I will be trying the "original" recipe when it is just my husband & I....these just seemed to work better for my kids. Great recipe! Thanks so much!

Cornbread that is a Meal

Mixed reviews in my house. My 8 y.o. daughter didn't care for it, my 4 y.o. son cleaned his plate, my husband thought it was good also & I'm on the fence. I agree with others, it's missing something. I TRY to stick as close to the recipe as I can the first time around to give an honest review. If you completely change it, you aren't giving an accurate review of this recipe. We have our beef processed in pound and a half pkgs so I used more hamburger and in mixing the cornbread I felt 1 cup of milk was plenty after mixing it up. Because most of my family doesn't care for jalapenos, I omitted those. I cooked my ground beef with the onion, added quite a bit of seasoned salt and some cumin and I still felt like it was a little bland. I baked at 350 for 25 minutes. It was pretty much done so I covered it with foil, turned the oven off & let it sit in there until my husband got home, about 15 more minutes. It was done through but I think the creamed corn gives it a texture or consistancy I didn't care for. Cutting back to 1 cup of milk is probably the key to getting it done in a shorter amount of time. I think this recipe has a lot of potential, maybe use sausage, bacon & some cream cheese and have it for breakfast??? I don't know if I'll try this again unless it will just be my son & husband at home eating it.

Sunday Best Fruit Salad

I made this for my son's 4th birthday party & it was a huge hit!!! Everyone loved it! I used 2 cans of peach pie filling, 3 cans of pineapple chunks, 6 apples, 6 bananas, strawberries, 1 lg. can of mandarin oranges and green & purple grapes. I topped with kiwi & strawberries according to recipe. It was beautiful AND delicious!!!! Thank you! The pineapple juice does an EXCELLENT job of keeping the apples & bananas from turning brown!

Brownie Caramel Cheesecake

This was OUTSTANDING!!! Very rich, good with a tall glass of milk! This is the first "real" cheesecake I have ever made & I was very worried about the turnout with all the reviews. I made this for my mother-in-laws surprise party & it was a huge hit! I followed Kathy's suggestions b/c I couldn't find a 9 or 10oz brownie pkg so I used one I had on hand, 22oz I think. I used a 10in springform, made my brownie according to pkg directions, baked about 15 minutes (next time I will do a little less). I used 3 pkgs of cream cheese, 3/4 cups sugar and 3 eggs. I didn't put any nuts around the edge or anything like that & the caramel didn't leak out. I was just careful to keep it away from the edge. I baked the cheesecake for 40ish minutes & it was perfect. The very bottom edge of the brownies got hard but I think reducing my initial cook time will fix that. I will definitely be making this again...and again...and again! :) Thanks for the recipe! I've been hanging on to it for nearly a year. I'm glad I finally got the courage up to give it a try!

Beef Nacho Casserole

Wonderful! My family loves sour cream so I used that instead of mayo but will make it next time with the mayo to see the difference. I liked that it had corn in it so my kids would get a veggie but I only had a 15 oz can of corn (instead of 10 oz) and I used the whole thing. Too much corn. Less would be better. As another suggested, this would be good to wrap in tortillas or I think just as a dip! Yummy! Thanks so much!

The Best Meatloaf I've Ever Made

This is the only meatloaf I have ever made so I hope it's not the best. My husband who is normally not a huge meatloaf fan thought it was great. Me on the other hand, I like meatloaf & thought it could be better. Our kids, indifferent. :) I can't pinpoint what I didn't care for but there was something. I'll try it again but might try to figure out what it needs next time. Thanks for the recipe!

Dad's Asian Slaw

Great recipe! I love this stuff and had been looking for a recipe for a long time. It turned out a little sweeter than I remember but next time I'll just add a little less sugar. Awesome! UPDATE: I think I must have just gotten a big 1/2 cup the first time b/c I just made this yesterday doubling the recipe & it was perfect! I used a full cup of sugar & the entire bottle of dressing. There is one little bitty bowl left, it was wonderful! I guess I just got carried away with the sugar the first time! ;)
