About this Cook
I am a stay at home mom. We have a daughter that will be turning 8 next month (3/2010) and a son that will be 4 (5/2010). I love to cook & try new dishes. My kids try everything I cook and usually love it. There have been a few things that are good but not "family favorites".
My favorite things to cook
Anything & everything! I love to test my skills with new things. I do have a recipe from a friend for enchilada's that I have become "famous" for.
My favorite family cooking traditions
Every year my grandma, mom, aunt, sister & cousin get together at my grandma's house for a weekend & make candy. My daughter is starting to help some & my cousins daughters are still too young but I'm sure they'll be joining in in a few years. We make everything from peanut clusters and fudge (choc & peanut butter) to "paydays", "snickers" and almond roca (my fave!)
My cooking triumphs
I made my first "real" cheesecake just yesterday. I was nervous due to some of the reviews but it turned out awesome! My husband even said he was impressed & that's hard to do!
My cooking tragedies
I'm not sure I've had any "tragedies"....give me time, I'm sure I will. :)

Grilled Salmon I
This was pretty good. It was raining so I did ours in the oven. I think grilling as directed it would be 5 stars. It was my first time making salmon & it was really easy!

Chicken Alfredo Pizza
This was really good. Didn't make own crust due to lack of time but will make again with homemade crust. Added some baby Bella mushrooms & that made it even better!

Pizza Rolls
These turned out good. I baked at 400 for about 15 minutes & some of the wrappers probably could have gone longer. I think they would have been even better if I would have fried them as instructed but was in a hurry & not wanting the mess. I made some pepperoni ones and I also made some scrambled eggs with cheese & bacon & did some of those as well. They turned out really good! The possibilities are endless! I plan to get more egg roll wrappers & try a variety of things with them for my kids to snack on this summer! Thanks for a great starter recipe!
