Easy Fried Eggplant

You must add more seasoning (a lot more!) to the bread crumbs and season with salt right after they come out from frying but this is just the base for whatever kind of fried eggplant you want to have. If you want to knock it out of the park add some Szechuan pepper (the numbing kind of spice used at Chinese restaurants) and red pepper flakes.

Zesty Zucchini and Squash

Not bad, but a little bland for my taste. I should've taken the advice of others and minced some fresh garlic into the mix. I served it with jasmine rice and topped it with a few dashes of cajun season.

Mostaccioli with Spinach and Feta

I'm assuming that if I liked spinach I would like the recipe as written so that's why I give 5 stars. This was my base recipe and from there it grew into something so amazing that if I told you how to make it I'd have to kill you.

Slow Cooker Chicken Stroganoff

This is some comfort food right here! The chicken gets very flaky and tender. A little on the dry side but you can add milk or cream to thin it out at the end of cooking.

Easy Snack Wraps

I like to add seasonings to my cream cheese depending on what stuffing I use. Cumin for Mexican wraps, oregano for Greek. You can make up endless combinations. Get the pre shredded lettuce and carrots and it is a breeze to whip up a bunch for appetizers.

Lime Chicken Soft Tacos

I loved this recipe! It's so different from the usual tacos we make. I might have added more lime juice. I'm not sure why some reviewers thought it was bland. It turned out very tangy for us. I didn't pack on the Mexican condiments like I usually do. Just a little sour cream, pico de gallo and a few shreds of lettuce.

Quick Tuna Casserole

Whoa, no way! My mom used to make this for me when I was little. I think she added a little shredded cheese to jazz it up. I hate mushrooms but you can't substitute other soups so I am stuck picking the tiny mushroom bits out of mine.

Mexican Bean and Rice Salad

This isn't a bad dish; very fresh tasting, but I felt it was bland. I added more lime juice hoping it would flavor the dish but it didn't help. I like the ingredients a lot so next time I'll try to come up with a different dressing.

Easy Chicken Taquitos

These were really easy to make (big bonus points because I can't always force myself to make a huge meal) and had a great flavor! It was the first time I had ever used canned chicken so I was a little nervous but it's just like canned tuna - no biggie. Like someone suggested, I added a little sour cream to the chicken mixture so it stuck together. I used way more than 5 drops of jalapeno hot sauce from Trader Joe's. I also sprayed some olive oil Pam on the baking dish and on top of the taquitos so they got crispy. When the taquitos were almost finished I added shredded cheddar cheese on top and let it melt. Next time I'll try pepper jack. Yum.

Sage Pork Chops

I made these tonight with very thick pork chops. I only simmered them for 30 minutes. They were amazing! When I make them again I will omit the salt. Very salty but whatever. I thickened the gravy with corn starch. I also used thyme instead of sage because I didn't have any on hand.

Avocado Asian Black Bean Salad

To be honest I really didn't care for this recipe. I made it like the recipe reads except I used a yellow pepper because that's what looked good at the market. It could be my taste buds but if I ever made this again I would eliminate the sesame seed oil all together. In my opinion that's what ruined it for me.

Thai Cucumber Tomato Salad

I followed the recipe exactly. I did not add peanuts since I'm not a huge fan. There's a very mild flavor but it's extremely fresh tasting. I'd make this again for sure. Maybe next time I will use halved cherry tomatoes and chop the cukes into cubes.

Awesome Slow Cooker Pot Roast

So easy! The meat came out really tender and moist. I sear the meat to keep the juices in and I added less wet ingredients but this is all my preference. I cooked the meat with big slices of onions and whole carrots on top. Served with buttered egg noodles and peas along with the cooked carrots and onions. This recipe is a keeper.

Cold Black Bean Salad

The husband and I love this dish. We make all the time. The flavors are fresh and tangy. You can make it super hot for the spicy lovers or you can tone it down for the tender tongues. I top the salad with cilantro.
