Easy Fried Eggplant
You must add more seasoning (a lot more!) to the bread crumbs and season with salt right after they come out from frying but this is just the base for whatever kind of fried eggplant you want to have. If you want to knock it out of the park add some Szechuan pepper (the numbing kind of spice used at Chinese restaurants) and red pepper flakes.

Zesty Zucchini and Squash
Not bad, but a little bland for my taste. I should've taken the advice of others and minced some fresh garlic into the mix. I served it with jasmine rice and topped it with a few dashes of cajun season.

Mostaccioli with Spinach and Feta
I'm assuming that if I liked spinach I would like the recipe as written so that's why I give 5 stars. This was my base recipe and from there it grew into something so amazing that if I told you how to make it I'd have to kill you.
