Vegetarian Kale Soup

This was excellent soup. I had kale in my garden so used that as well as fresh tomatoes. I tweaked the recipe to what I had on hand. I only had butter beans which were really good in this soup. I made my own Italian seasoning and used low-sodium chicken stock as that was what I had on hand. Can't wait to eat left-overs. Good recipe Donna!

Hash Brown Casserole II

I got a wild hair and decided to use freshly grated potatoes. After that time intensive task, I then grated the cheese and soldiered on. La sigh. If any of you get this idea; I would suggest you either pre-cook the spuds and then grate or grate then pre-cook or you will be baking for a long time. Lol. Wow, was it worth it! I did use mushroom soup vs chicken as that was what I had. I also didn't have cornflakes so used panko. I did use all the butter but divided it up between the casserole and the panko on top. I'll be making this again with or w/o fresh potatoes. Thanks CMANSKY.

Best Marinara Sauce Yet

This was a wonderful sauce. I did add additional garlic and used fresh herbs. Per other reviewer's added a touch of brown sugar. My whole family loved, loved, loved it! Thanks Jackie for a great marinara.

Potato Spinach Casserole

This was a wonderful dish. I used a good amount of garlic and more green onions along with fresh spinach from my garden. I sauteed all those ingredients together while cooking the potatoes. I chose to use an Italian blend of cheese. Once I mixed everything together (including the cheese), I had a hard time putting it in the oven because I kept eating it. I put a good amount of S&P in as well. The only problem I had with this recipe was that it was so darn hard to stop eating it. Thanks for a great versatile recipe.

Baked Tuna 'Crab' Cakes

These were delicious. I had grilled the veggies called for the night before w/ the exception of the green onions. I rough chopped those veggies and then put them in my small food processor. I used panko vs bread crumbs for both the filling and for dipping. I was surprised how good the lime was in this. I made huge patties which turned out crunchy on the outside and moist on the inside. I made a mayo, sour cream and lime sauce w/ fresh chives, parsley and cilantro. Also added kosher salt and fresh pepper and just a tiny bit of basil. My family loved this sauce along w/ the tuna cakes. I did have to cook mine about 20 minutes longer then stated but as I said they were huge. No left-overs....Darn. lol. Enjoy and make your own sauce with these. It's great!

The Best Meatballs

Bacon-Wrapped Asparagus

This was so good. I used a half strip of bacon for each 8-10 thin asparagus and baked them. Can't wait to try this on the grill. I put some kosher salt and olive oil on the portion that did not have the bacon wrapped around them. My whole family loved these. Will be making again. Thanks Patricia

Creamy Rice Pudding

Erica, this is so good. I made this as stated yesterday with the exception of raisins. I didn't have any. I also added cinnamon and nutmeg to my bowl. Wow! It was so good that I made a triple batch. lol. I had planned on making fried rice but was so distracted by this awesome dish that I had make more for later. Thank you for posting a really easy recipe that is great warm or cold.

Gourmet Mushroom Risotto

This is the second time I've made this in as many weeks. I really love it. I had never eaten or made risotto before. Now, I'm hooked. I used a couple tablespoons of finely diced sweet onion and a pound of white mushrooms as that was what I had on hand. Thankfully, I have some fresh chives in the garden (in February, I know!) lol. I chose this dish as my birthday dish which my mom made from this recipe. Yum. Thanks Myleen!

Scalloped Potatoes and Onions

I've made this recipe several times and love it. I forgot to rate it. I usually make more when I make this because we like leftovers. I use a lower sodium chicken broth and this last time added fresh chopped chives from the garden. Yum. It's so rich tasting, especially with a little more mayo. No one would believe there is no milk or cheese in it. I'm sure I'll be making this again and again.

Blueberry Waffles with Fast Blueberry Sauce

I made the blueberry sauce to go with the "Wild Rice Pecan Waffles" from this site. I added blueberries to the waffles as well. These two recipes are awesome. I highly recommend trying this combo. Thanks swizlesticks for an awesome blueberry sauce! I can't rate the waffles obviously so am rating it purely for the sauce.

Wild Rice Pecan Waffles

Wow, I may never eat waffles any other way. These were outstanding. I doubled the recipe and unfortunately measured the salt wrong. I thought it called for a tablespoon versus a teaspoon. Well, after the first 2 came out, I added more flour, oil and milk which helped a lot. I also added blueberries in with the nuts and wild rice. Yum. I made a blueberry sauce from the recipe "Blueberry waffles with fast blueberry sauce" from this site. The maple syrup along with the thick blueberry sauce was heavenly. Even without the addition of blueberries this is a wonderful recipe. Can't wait to make wild rice again for left overs. Lol.

Fabulous Roasted Cauliflower Soup

This was just amazing soup. I did tweak it to suit my tastes and what was on hand. I roasted 3 carrots, 4 cloves of garlic and 1/4 of a medium onion along with the cauliflower. I increased the chicken broth as I only had a cup of 1/2 and 1/2. I used a stick blender and got a wonderful consistency. Added the 1/2 and 1/2 at the end. After eating the first bowl to which I added dill weed; I decided it was so good, I added it to the whole soup. Dill makes almost any veggie dish taste so much better. I'll be making this often. Creamy Cilantro Chicken with a Kick

This was an excellent recipe. I made changes due to what I had on hand. I only had about a 1/2 cup of light coconut milk and jalapeno peppers and no lime juice. I had to use lime powder. It was the only thing I had and I was glad I had that. Due to lack of liquid, I added chicken broth to the marinade only when it was time to cook. I let it marinate over night and my son declared it was the best chicken he's ever had. We like spicy food. The sweetness of the coconut and the cilantro and lime were divine. Thank you for posting. I will be making this as often as possible, hopefully, with the proper amount of ingredients. I served this with Quinoa with Asian Flavors on this site to which I added chopped carrots and slivered toasted almonds. Good combo.

Coconut Lime Rice

This was so good! I did not have basmati rice so used a medium grain that I had on hand. Also, did not have the coconut oil or flakes. Regardless, it was so tasty! I used Trader Joe's Lite Coconut Milk. I used low sodium chicken paste for the chicken broth and topped it all off with fresh cilantro. Next time I make this (which will be soon) I'm going to dice some jalapeno's for a little kick. I made this to go with the Curried Red Snapper on this site. I used cod which worked just as well. Thanks Karmabelle for a wonderful recipe.

Key Lime Cheesecake I

Fantastic Lemon Butter Fillet

Great sauce. I didn't use the lemon pepper but I had a large lemon and fresh cracked pepper so it was perfectly lemony and peppery. I would use this sauce on more then just cod or fish in general. It was a big hit.

Tomato Feta Salad

This was excellent. I could consider this a desert! I had several varieties of tomatoes from my garden and probably used less olive oil and balsamic vinegar and a bit more fets (it kind of fell in), not a problem though. I just guesstimate on many recipes, taste and adjust. This was a quick, wonderful and easy dish to prepare. I could eat it everyday and would if my tomatoes would ripen faster. Thanks for this great recipe!

Barbeque Pork Two Ways

This was really good. Everyone went back for seconds. I started my roast by cutting it into steaks and grilling them with alder wood chips for a smoky flavor. I then put the sauce together in the pan and cut the steaks into big chunks and threw it in there. I knew it would take several hours to cook but I wanted to speed up the process a bit. I added a 6 oz can of pineapple juice (the enzymes help break down the meat) and a TBS of molasses along with some smoked and regular paprika. The sauce as written was excellent which is why I gave it five stars. If you want it spicier; add more pepper or cut a jalapeno in half and let it simmer with the meat. The additions I made later were good too and were done to speed up the process (I was hungry) Wonderful sauce as written. Thanks Kimber.

Oven Fried Chicken III

This is the second time I've made this dish. The first time I thought it was a little greasy due to the mayo. I decreased that this time and diluted with milk. In this mixture, I added some spices including cayenne. We like our chicken spicy. Also, used panko this time along with the spices listed and little bit more of the cayenne and paprika. Thanks Elizabeth! What a great concept.
