Curry Stand Chicken Tikka Masala Sauce

Wow! I have been cooking Indian food for the past few years and this is one of my favorite recipes. I only made a few small changes...I marinated the chicken for several hours in the fridge in a mixture of plain Greek yogurt, Garam masala, turmeric and curry powder. Then after cooking the onion and garlic, I added the chicken/yogurt mixture and cooked it in the same pan. After a few minutes I added the tomato sauce and finished the recipe out as written. AMAZING!

Colleen's Slow Cooker Jambalaya

Wow, this is really good and super easy. Didn't have celery on hand, but I don't like it much anyway, so I didn't miss it. Other than that, the spices are perfect and everything turned out great. Yay for leftovers the next day! Thanks, Colleen!

Zesty Hominy and Cheese

This was a good recipe. I reduced everything a little, as I only used two cans of hominy -- I did one white and one yellow to make it a bit more visually interesting. The only other small changes I made were to add some garlic powder and used diced jalapenos instead of green chiles. Great side with enchiladas as a nice change from rice or beans! Thanks!

Hummus III

A great recipe to get started with. I tamper with amounts of all the ingredients listed, and it's always great. The only other thing I add is a bit of cumin. I think it goes nicely with the other ingredients. Thanks for a great recipe!

This is soooo good! Even my mom, who turns her nose up at any sandwich that doesn't have turkey on it, loved it. Thanks for the olive salad recipe -- it's great and lends itself nicely to tweaks and additions/omissions.

Roasted Pork Loin

This was very simple and delicious. I used fresh chopped rosemary and lemon thyme and the herbs went perfect with the wine. I also did this in a slow cooker instead of the oven. It always comes out fork tender that way. Thanks for the recipe!

Yellow Squash Casserole

This recipe is so easy and sooo good. The only thing I change is to add a bit of garlic powder to the egg mixture and then I do half yellow squash and half zucchini to make it more colorful. Even my husband loves it and that's saying something! :)

Pumpkin Chocolate Chip Cookies III

Mushroom Chicken Piccata

I didn't have chicken on hand (I know, when does that ever happen?) so I made this recipe with boneless pork chops. It was sooo good! The only thing I changed was to add a bit of garlic when cooking the other veggies and tossed in some capers toward the end of the simmering time. I also doubled the sauce ingredients so we'd have plenty to go over the mashed potatoes I made to go along with the chops. Thanks for a great recipe!

Smothered Pork Chops

This was so simple and sooo good. It's different than how my mom made it growing up, but I'm always up for a new twist on an old favorite. The pork was so tender we could cut it with forks. The gravy was delicious served over rice. The perfect recipe for when you need comfort food.

Red Snapper Livornese

I love this recipe. We're always looking for ways to cook the fish we bring home from the coast, and this has become a favorite. And what I love is that no modifications are necessary (but I do add more olives b/c we love them)! Simple enough for a family meal, but nice enough to serve to company as well. Thanks for the great recipe!

Spicy Shrimp and Grits

This recipe was simple and very good -- hubby and I both enjoyed it. I'm wondering if some people's turned out runny because the recipe calls for 4 cups of stock to 1 cup of grits. I just followed the directions for the grits on the box and it only called for 3 cups of liquid. I also drained the tomatoes & chilies. For presentation, I think I'd prefer a "deconstructed" version of this recipe, but for a casual meal with family, a one-pan recipe is the way to go.

Candied Chicken Breasts

Made this last night for hubby and two of his friends with an entire bag of chicken tenderloins (3 lbs, I think) and there were only two pieces leftover! Needless to say they loved it. Didn't brown the chicken ahead of time, and only used 3/4 c. of brown sugar, but doubled the other recipes b/c we like our sauce. Also added a teaspoon of corn starch (needed more) and a tablespoon or so of Sriracha for some spice. Also subbed pineapple juice for the water and poured the sauce over the chicken and pineapple rings so it could all bake together. Was great served over brown rice and with green beans. Definitely a keeper, and so easy!

Magic Cookie Bars II

Took these to a benefit bake sale at work last week -- they were gone before I even got to try one! I heard they were great though... I did pre-mix the butter and crackers and pressed them into the bottom of the pan so it would cut better, and also added the whole can of Eagle Brand. Also followed another reviewer by doing a few minutes under the broiler after the 25 min. baking time, just to brown up the coconut. Great things about this recipe is how versatile it is and how EASY!

Texas Pork Ribs

From one Texan to another....oh my gosh these were soooo good! I followed the spice rub exactly, let them sit and baked them as directed. I was running short on time so we just put the ribs on the grill and "sauced" them with store-bought sauce for the last few minutes. They were so tender and delicious. A definite keeper!

Deep Dish Layered Salad

This is a GREAT recipe for Easter! We make it almost every year. The nice thing about this salad is you can put whatever veggies in it you want and it's so colorful and pretty served in a trifle bowl. One change my family makes to this recipe is that instead of 2 cups of mayo, which I think is too much, we use 1 cup of mayo and 1/2 cup of sour cream. Deeeelish!

Oriental Cold Noodle Salad

I made this last week to take to a friend's house, as she was making Asian grilled tuna steak salad. I ended up having to use the thin rice noodles because I couldn't find soba, but it was still really good. They absorbed all the liquid and needed more, so I ended up doubling the sauce ingredients. This is sooo tasty -- it's good cold or warm.

Lemon-Garlic Green Beans

The nice thing about this recipe is you can add or subtract any of the flavors to make it more or less lemony and/or garlicky. Simple, fresh flavors and a great way to use fresh green beans.
