Spinach Pinwheels

Reviewed: Oct. 14, 2007
I was reallt disappointed with this recipes, especially after reading a number of glowing reviews. They had close to no flavor. I may try them again sometime using fresh spinach as someone suggested and MUCH more of the cheese spread as someone else suggested.

Baby Back Ribs

Reviewed: Jul. 9, 2007
I have to give this 5 stars because it delivered flavorful, tender meat that feel from the bones as promised, but I don't think I'd make this again. Since the meat did in fact fall from the bones, we didn't actually get to enjoy a real rib eating experience where you actually hold the ribs in your hands and chow. The meat fell off as soon as a rib was handled so we ended up eating the meat off the plate either with fingers or a fork. Not munching away on the actual rib took the fun out of it for me.

Slow Cooker Chicken Taco Soup

Reviewed: Jul. 6, 2007
I'm glad others who have made this enjoyed it, but I was disappointed. Found it lacking in flavor. May try it again in my dutch oven on the stovetop. Might have been the slow-cooking that diluted the flavors.

Tortilla Rollups IV

Reviewed: Jul. 5, 2007
Great with a few changes: 2 pkgs cream cheese as other suggested; ditched the sour cream; added 1/2 a diced red pepper for some crunch; went easy on the salsa so wouldn't be too runny; used about 1 cup cheddar so wouldn't be too gummy; added a dash of cayenne for a little more kick. 5 stars with these changes.

Jet Swirl Pizza Appetizers

Reviewed: Jul. 5, 2007
Delicious and easy. Added about 1/4 cup more mozz and cooked for about 30-35 minutes to be sure inside dough was cooked. Other than that, no changes needed.

Chicken and Broccoli Braid

Reviewed: Jun. 6, 2007
To save time I used a grocery store rotisserie chicken as some reviewers suggested. Mistake. Since these birds are so salty and pumped with who knows what, the texture was weird and tasted like tuna. Will try again with chicken breasts that I cook myself.

Easy Garlic Broiled Chicken

Reviewed: Jun. 1, 2007
A nice, quick way to use split chicken breasts w/simple ingrdients you usually have on hand. Pretty salty, so I'll try w/low sodium soy sauce next time and a dash of worchester sauce as suggested by others.

Waaay too salty for my taste. I should have realized that these ingredients would be very salty.

Cajun Chicken Pasta

With a number of modifications suggested by earlier reviewers and some of my own, this was delicious. A good base recipe that you can play around with to suite your taste.

G's Flank Steak Marinade

Reviewed: May 8, 2007
Yummy, but as others noted, pretty salty. I'm looking forward to trying this again w/low sodium soy sauce and maybe a little extra brown sugar.

Mexican Casserole

Reviewed: Apr. 16, 2007
Made once as written and once w/some changes. Liked the revised one better: Flour tortillas instead of corn, half cheddar/half Monteray Jack (all cheddar was greasy), and I put half the cheese on top of the first layer of meat mixture instead of putting all of it on top. Also used about 1/2 cup extra cheese. Delicious.

Flourless Chocolate Cake I

Reviewed: Apr. 15, 2007
Great recipe. I used 12oz semi-sweet chocolate chips and 8oz Nestle's bittersweet chocolate. Using a springform pan worked well, but 3 layers of heavy duty foil is a must. I had water seep in all the way to the layer closest to the pan but no water made it's way into the cake. Took quite a while to incorporate all of the butter since it needs to added a little at a time. Might be because I used a hand held mixer. Easy and delicious.
