Carly's Salmon En Papillote (In Paper)

YUM! This was awesome! I've cooked other fishes this way before and was curious to see if anybody else had done it, or if there was a Salmon En Papillote recipe on allrecipes. I'm glad I checked it out. I'd had a huge fillet of Salmon in the freezer for too long. This recipe was fast and that's my favorite kind of recipe.

Most Excellent Sandwich

I added pastrami under my cream cheese and didn't have alfalfa sprouts, but put lettuce and avocado in it's place, on top of the mozzarella, after it had baked. Mmmm! Mmmm! I was so full I could have exploded!

Green Beans with Almonds and Caramelized Shallots

didn't have shallots, but used some diced onions, probably a little less than 1/4 cup. I steamed the beans & bell pepper in the microwave while I blanched the almonds and made the butter sauce. Yum! My 6 month old is all smiles while gnawing on a couple. My older kids are chomping down. They are not usually good eaters, but they got to blanch the almonds and snap the ends off the beans and put them in the steam bag then the microwave, so maybe that has something to do with it too. Thank you for sharing this recipe.

Vermicelli Salad

Patriotic French Toast

This was awesome! I hate to say that I changed the recipe a tad, but I did. I'm pregnant and wanted more protein so I used 6 eggs and approximately 1 cup of milk. Also, not a huge sweet tooth, so I halved the cream cheese & sugar part. Thank you for sharing!

Baby Spinach Omelet

Followed the recipe to a "T". My 4 year old son, with his mouth full, said, "YOU ARE AN EXCELLENT COOK, MOM!" My 3 year old daughter waited till her plate was cleaned and said, "That was a Yummy dinner. You are a great cook, Mom!" Hubby loved it too. Not a bite left over anywhere. So, thanks a million for making me a star in my home! ?

Melon Chiller

Normally I follow these recipes to a "T" before I rate it. I was a little afraid to do so on this one though. Not a big sugar lover. I halved the recipe and used a blender because I was afraid there wouldn't be enough cantaloup flavor otherwise. It's really good. Next time I'll not use the blender and probably still half the sugar, not sure. Def. can see this being nice to sip on the front porch during the summer. Right now it's making the winter not seem so cold. :)

Only had frozen spinach and 4 eggs, but I LOVED it! The kids hated it though. But they'll be aquiring a taste, 'cause I'm gonna make this several times again in our future.
