Zucchini Brownies

This recipe is outrageously good! Chewy and chocolately! Make it exactly as it is written! NO EGGS! I must say I omitted the nuts (allergy), and included some chocolate chips. And at the end, I poured more chocolate chips on top and returned the pan to the oven for a minute or so to melt them. They spread easily - I used the chips in place of the frosting recipe provided. Just a preference. My family LOVES these brownies! Thanks for a fantastic way to use my bountiful zucchini!

Butternut Squash Soup

FANTASTIC! Used two butternuts from my garden... Like many others, I roasted the squash in the oven for about 45 mins at 350. I ran out of time, and stored the cooked squash overnight in the fridge. The next day, I sauteed the onions in a dutch oven then put them in a large bowl with the squash and all its juices, and the bouillon (I used Emeril's, as I love it). I used a hand blender to puree. I then added only ONE package of whipped cream cheese. I returned everything to the dutch oven and seasoned with black pepper and a few grates of fresh nutmeg. Did not use cayenne - personal preference. It was rich, thick and delish - loved by all, and reheated beautifully. Thanks for this recipe - I will make this many, many times in the days ahead!

Indian Pudding

Just what I was looking for! I had this in a restaurant in Chatham on Cape Cod, and hoped to repeat the flavor I craved... thanks so much! For anyone else who may try it: I didn't have a double boiler, and so did it in a sauce pot with a thick bottom, over gas heat (easy to control!) My cook time on the stove was closer to 15 minutes as a result, and 1.5 hours in the oven as directed. As everyone else says, serve warm with a really good vanilla ice cream or fresh whipped cream. Awesome with a steaming cup of coffee alongside... I will add raisins next time - just a personal preference. TERRIFIC RECIPE!!

Mom's Cucumber Salad

This was quick and easy and WONDERFUL. I, too, sweated the cucumbers a bit with salt, then rinsed them. I put them onto a terry towel, and actually rolled it to press out the remaining water. I made the dressing while that was going on, and used 1/2 cup mayo, 1/2 cup sour cream. I used cucumbers from my garden - and there were no leftovers!!!

Favorite Corn Bread

Great recipe - very simple. Knowing my family likes a sweeter corn bread, I doubled the sugar and added probably 1/4 cup honey (I didn't measure - just poured). Also, my oven runs hot, so my cornbread was done in 18 minutes. I lined the pan with parchment, and the bread squares popped right out! Delish! Thanks for the recipe - I will use it again!

Shrimp and Avocado Cocktail

I made a slight change to the sauce. I used 1/4 cup of mayo, 1/4 cup of cocktail sauce, 1/4 cup of chili sauce, and the hot sauce listed in the recipe. I coated the shrimp and avacado with the mix (I did not use all of it - add according to your tastes), and then piled the "salad" onto toasted rolls for a sandwich. It was fantastic! Some of us added a thin slice of cheese. This was quick and easy and light for the summer.

Honey-Mustard Salad Dressing

This was so easy, and everyone loved it. I halved the recipe and had plenty for my family of four, with leftovers. I think it would be a good glaze/marinade for chicken as well.
