Chicken Enchiladas I

These chicken enchilades taste great! The flavors were absolutely delicious and I had a great time making this with my friend. We experimented by adding some red peppers, using a whole can of chopped tomatoes (instead of the tomato sauce), extra sour cream and cheese (her request, I swear!), green enchilada sauce (replaced the taco sauce) and fresh cilantro (instead of oregano). I have my own ideas in mind, so I can't wait to try this recipe again! We paired it with some yellow rice and were quite full- VERY YUMMY!

Easy Honey Mustard Mozzarella Chicken

YUMMY! My girlfriend and I got together for a 'girl's night' and this was the dish we chose to try for dinner. The chicken was excellent and the both of us were so pleased! I paired the chicken with asparagus and some rice pilaf, but there are tons of options of what can be served alongside the yummy chicken breasts. My boyfriend ate the left-overs the next afternoon and he asked if I could make it fresh for him some day- this is a keeper, as no one can ever go wrong with bacon :D

Steak Pie

I chose to prepare this dish for my Dad's birthday in November 2007. It was chilly outside and everyone gave the recipe a 'thumbs up.' I'm not the most daring cook in the kitchen, but my Dad's culinary advice (he's an ex-chef) helped me to spruce-up the recipe and I will continue to incorporate the changes in the future. I added frozen green peas and lots of mushrooms to the dish...carrots would work just as well, too. I also used beef stew meat, but next time I will not chose a cut that takes so long to tenderize...as I had to simmer the meat for quite a bit longer than what was called for. Due to the longer simmering time, my Mom was worried the gravy/sauce mixture would cook down too much, so she started adding water- BEHIND MY BACK- to keep it from evaoporating. This is not recommended because everyone would have preferred a thicker sauce. Mom apologized and we've all forgiven her ;-)

Awesome Honey Pecan Pork Chops

The name of the recipe sums it up and these chops are a keeper in my book! I like pork nearly every way it can be prepared and this recipe is no exception- the pork was superb and the honey pecan sauce added a sweet flavor that blends well with the taste of the meat. I read the other reviews prior to making the dish and I'm glad I did because I took some advice and added soy sauce and chicken stock to the honey pecan sauce. My sauce didn't harden as it began to cool and the additional ingredients allowed me to make enough sauce for left-overs. We ate two chops on the night I made this recipe and over the past two days, I've enjoyed the left-overs. The pork even heated up in the microwave without drying out and I will be certain to make this dish again :) Due to a late start for dinner, I paired the pork chops with some frozen peas and stove top stuffing (for pork).
