Oatmeal and Applesauce Pancakes

Very moist and thick pancakes. My 3 year old really liked them. They lacked a bit of sweetness to them but overall they were great. I'll make them again in the future.

Sausage and Broccoli Skillet

Having said that, I used pork/venison sausage instead of the sweet Italian it called for and I wish I hadn't. I think this dish needs the sweetness to offset the saltyness of the rest of the ingredients. I couldn't find Cream of Brocoli and settled for Cream of Brocoli and Cheese. I used a package of Wacky Mac instead of the spirals to bring more color to the dish. I did add a bit more milk (about 1/2 c.) because my broccoli (which was fresh, not frozen) just didn't have enough liquid to cook. Overall it wasn't that bad but I won't be making it again. Why? My 3 year old daughter only ate the sausage and the oldest, a 5 yr. old, tried it and wouldn't touch anymore (she's usually a good eater). My 1 year old ate the macaroni okay but it wasn't the ideal dish for a youngster with few teeth. It's worth trying if you have nothing else to cook and have the ingredients on hand. Maybe it was just a personal preference and your family will like it. But I won't be making it again. Always like to try new recipes, though, so thanks for the post!

Baked Tilapia in Garlic and Olive Oil

Followed recipe pretty much like it said. I used regular pepper. I did grill it on my indoor 'george foreman' look alike grill. It turned out good. Definitely needed some salt though.

The Best Spaghetti Casserole

I wouldn't call this the Best casserole but I'll make it again simply because my 5 yr old, 4 yr old, and 22 month old all gobbled it up. They really liked it. It was okay in my opinion. I did half the sauce like others suggested and I'm glad that I did because it fit perfectly in my 9 x 13 dish. If you're looking for something a little different, give the recipe a try.

Shrimp Scampi V

I've made this twice. The first time it was restuarant quality. The second time it wasn't as good but that had to be a mistake on my part because like I noted, I had made it before and the recipe was really great. Worth a try if you have the ingredients on hand.

Onion Rings

Didn't have buttermilk for my usual onions rings so I decided to give these a try because I had lots of Krusteau pancake mix. I floured the onions before I coated them in the mixture (which I substituted beer for the water). They were perfect! I used two cups of the pancake mixture with 1 1/2 cups of Miller Lite beer. This was enough to coat about 1 1/2 sweet onions (which by the way fed 8 adults with leftovers). Will make again and again!

Mom's Carne Guisada

I agree with another that this is a great starter recipe to tweak as you see fit. I did add 1/4 cup more of flour and only had 1.5 lbs of meat. Other than that, I followed the recipe exactly. Good flavor. My husband liked it, even though I knew it wouldn't taste like his mother's carne guisada. Make sure to brown the flour long enough.

Easy Chicken Enchiladas

Very delicious! I only used 1 c. sour cream and added spices to my chicken (some garlic powder and cumin). I used Tyson Grilled Chicken and baked them in the oven and then diced them up very tiny. This dish is so tasty. I think it's the cream of chicken soup mixed with the green chiles that gives it that special flavor.

Peanut Butter Banana Bread

Okay...I was skeptical about this recipe because so many reviewers had changed things here and there but it actually turned out okay. I made 6 muffins and a smaller loaf. The muffins cooked for 19 min. and the smaller loaf is still in the oven. Here were my changes...I pressed about 1/4 c. dark brown sugar in the measuring cup and filled to the top with white sugar. I only had 1/2 c. peanut butter. I added about a tsp. of vanilla and sprinkled in some cinnamon. I also added about 1/4 c. sour cream. Oh yeah, I used 1/2 stick of butter with 1/2 c. applesauce. The muffins taste pretty good with a smear of butter. Not bad for what my girls called- WEIRD- when they saw all the ingredients I was putting in it. They even asked for more after tasting the first bite.

Savory Grilled Corn

Very flavorful. Should have grilled a bit longer but nonetheless, still a nice alternative to the traditional grilled corn. Didn't have parsley so I substituted with Vegetable seasoning by McCormick. Will probably make again, but just grill longer (10 minutes more) and turn halfway thru grilling.

Grilled Shrimp Tacos

Very simple, but very succelent. I made exactly like the recipe said (and grilled 3 minutes per side). Perfect! Paired with the tomato avocado mango salsa....restuarant quality!

Avocado, Tomato and Mango Salsa

Really, really liked this. I was trying to duplicate Joe's Crab Shack's mango salsa. It's a close replication, but not quite. Even still, it's devine! Make sure that your avocado, tomato, and mango are not over ripe to avoid soupy mixtures.

Onion Pan-Fried Pork Chops

I used thin sliced chops with Lipton's Herb and Garlic instead of Onion Soup mix. Tasted good. I fried each chop 1 minute, flipped and cooked another minute, and repeated this two more times (total cook time 4 minutes). Toward the end I decided to just cook each side 2 minutes instead of flipping every other minute (bad idea....edges got too brown and curled up). Will make again because it was very easy and my husband liked it.

Sausage Cheese Dip

Made it exactly like it called for. Will thin it out with a little milk next time BUT very creamy and tasty. Definitely a keeper. Btw, I used Kraft sour cream (it's creamier than Daisy).
