Always A Winner Potato Salad

My husband has always raved about his mothers potato salad and I have never been able to come close. Well this year he found a new favorite. I left the eggs out because he has never been fond of hard boiled eggs but it still turned out really well. I just went a bit easier on the mayonaise. I did cut back on the paprika because of other suggestions and it still gave it a nice color and flavor. I think they were right about halfing the amount. I also used frozen salad shrimp (a whole bag) it was more than the recipe called for but due to the lack of eggs I figured I had room for some give. It turned out nice. I also added some chopped celery. You can alter this recipe to your tastes and it still turns out great. What more can you ask for?

Mafioso Chocolate Cake

I usually make a chocolate cake using a box and adding pudding but decided to try to make one from scratch this year. I have dear friends that just love a good chocolate cake. I tried this recipe and and WOW! It was melt in your mouth delicious. The frosting was nice and thick and easy to spread. I have never had frosting turn out so well. I made a two layer quarter sheet cake because the single layer looked a bit small. The two layer was a giant and perfect for Christmas dinner! It was a little time consuming to make but well worth it. I made it a day ahead and it was perfect! I can not say enough good things about this cake!

Baked Corn

This dish was truly different. It was not quite cornbread and not quite casserole something in between the two. It has the consistency of a moist cornbread and is a little sweet. (i used sweet style corn for both!) It went over very well and was easy to make. I recommend it to anyone who needs a bread style dish to compliment their meal.

Cheesy Creamed Spinach Casserole

This was simple to make and so delicious! Even my guest that didn't like spinach tried it and said how good it was! I made my whole Christmas dinners from recipes on this website and they were all so good I figured the least I could do was come back and review them. This recipe is a definite keeper!

Christmas Brunch Casserole

This dish was very tasty. I made it for my family for Christmas breakfast and they loved it. Some of our guests arrived early for Christmas dinner so I offered them a taste of it to tie them over until dinner. When they were getting leftovers the guy asked me for some of that "great breakfast dish" to take too. My husband doesn't like mushrooms so I subsitituted one 10oz box of frozen spinach for them. It was wonderful. I cooked my bacon really crisp but it was still kinda limp when it was all done. Just a heads up. It did not detract from the dish at all!

Aunt Millie's Broccoli Casserole

This recipe was really great! I think it would be better with about half of the amount of pepper. The overall taste of it was really good though! One of the people at my Christmas dinner liked it so much he asked for the rest of it to take home. Since it is so easy to make I told him sure. I can make more!
