Chantal's New York Cheesecake

As always, I followed the recipe exactly as written, out of respect for the person who wrote it/posted it. I enjoyed it but gave it 4 stars because it was missing that tangy flavor from the cream cheese. I think I will reduce the amount of sugar next time and try it without the milk or flour (per a couple of reviews I read). Mine cracked but you know what? I don't care! :) It was still very good and this was my first time making cheesecake.

Mom's Cucumbers

Delicious in a bowl!! Followed the recipe pretty much, but decided not to drain the cucumbers. As it sat it got juicier, but it didn't alter the flavor one bit. I used strips of sweet vidalia onion instead of chopped. Sweet, cool, refreshing and a great compliment to a steak!!

Key Lime Pie VII

Awesome!!!!!!!!!!!!!!! I used a garlic press to squeeze juice out of the key limes..just cut them in half and popped them in. Followed recipe to a tee (as everyone should the first time around) and it was fantastic!!

Oatmeal Peanut Butter Cookies

Deliciouso! I followed the recipe as it was, just adding Reeses Peanut Butter chips for extra punch and these were fabulous!!! You can't even tell the oatmeal is in there and they give it a good texture. I used tablespoons and baked them for 14 minutes. The keys to my cookies coming out so well are due to the following: 1. test batch - I bake 2 cookies to see if temp and size are correct. 2. ALWAYS use parchment paper - it has made a world of difference 3. Chill batter in between baking batches 4. I only put 6-8 cookies on one sheet, so they are not overcrowded and bake evenly.

Sour Cream Pound Cake

Holy salami, call my mommy! This is the best pound cake! After baking it according to the recipe out of respect for the baker, I began adding 1/2 tsp each vanilla and almond extract. Delicious! I have the recipe memorized now!

Broccoli with Garlic Butter and Cashews

delicious! I only had frozen, but it worked very well. While cooking the sauce, I noticed it was thin, so simmered 2 minutes to thicken it up. I tasted the finished product and loved it, but as I like some heat, added a tablespoon of crushed red pepper flakes. This is a wonderful side dish!

Oatmeal Chocolate Chip Cookies I

I make these JUST as the recipe calls for, out of respect for the person who wrote it. They are fantastic just the way they are! Because my oven is an older model and harder to regulate temp., I bake them for 13 minutes instead of 15 (found out after the first batch got a bit too brown!). Note after baking a dozen batches of these: I prefer the milk chocolate morsels in this cookie. They melt better and are silkier than semisweet.

Tangy Pork Sandwiches

Very Yummy! Will definitely use this again...I do agree with one reviewer that simmering it for 30 mins. to thicken it up would be a bit better, but it was still great. As we are North Carolinians, I topped our sandwiches with cole slaw...:)

Slow Cooker Lasagna

Made as directed and it was great! 4 hours on low is perfect and mixing it up makes it easy breezy..:) I thought it could use a bit more seasoning, but using spicy sausage next time might take care of that.

Coconut Macaroons III

They were very good, but tended to lose their shape in the oven and got a bit burnt on top where the coconut stuck out. The next time I am going to grind the coconut up and see if that creates a more uniform and evenly browned macaroon.

Oatmeal Raisin Cookies I

As always, I followed the recipe exactly as written, so I could give a true review. Mine turned out great! They were VERY moist and chewy and yummy. I only got 24, but used TBS instead of dropping TSP on the cookie sheet. I used parchment paper, and they pulled off easily. I guess since I dropped TBS instead of TSP, my cookies were puffy and gorgeous. August 2012 - made these again and only changed things by adding extra half cup of flour. OMGoodness, they were AWESOME! Used parchment paper, chilled dough while pan was cooking, and baked for 11 minutes..that was the best time for my oven. This recipe rocks and I upped my stars!

Zippy Summer Shrimp

Delicious! Tangy, slightly spicy, lemony goodness! I did use ready to eat shrimp and it still came out great. took one readers advice and deglazed pan with white wine..I also added some butter. Poured over noodles and topped with shrimp....YUM.

Easy Garlic Broiled Chicken

Ummmm..YUM! So simple, yet so delicious! While I try to make the recipe exactly like the owner states, but didn't want to broil it, so took the advice of another and baked thighs (bone in) for 45 mins, basting every 15, then broiled for 5 to crisp skin (we like skin on!)...Fantastic! Added to recipe box!

Spicy Fish Soup

In the words of Guy Fieri: "Holy Salami, Call my Mommy!"...this was FANTASTIC! I did take one readers advice and bought the diced tomatoes with the green chilis in it. I prefer a tomato-based broth, so I reduced the chicken broth by 1/2cup and added 3/4 cup of tomato sauce....YUMM-O! I didn't have nonfat yogurt but simply used 3/4 c of fat free sour cream...delicious!!! I also like spicy, so I added 1/2 tsp of red chili flakes. I served it over rice and with crusty bread...one of my new favorites!
