Great recipe! So simple and delicious. The only change I made was to doublevthe broil time and to use cumin instead of corriander.

Moroccan-Style Stuffed Acorn Squash

Wow! Exceptional recipe both in taste and visual appeal. This dish is very adaptive to personal tastes and ingredients on hand. Because I did not have raisins and couscous I substituted dried cranberries instant brown rice.

New Orleans Corn Bisque with Smoked Sausage

This soup is rather bland. But the basics are good as it makes up a nice thick chowder. Needs 2 cans of corn. Also perhaps increase the amount of onion or add garlic and some cayenne? However, refrigerating it overnight does make it more flavorful.

Cranberry Apple Casserole

Great taste and so easy. I added cinnamon for an extra punch and served with whipped cream. Slightly sweet with a little bit of tartness.

BAKER'S ONE BOWL Brownies

I think this has the potential of a 5 star, but I cooked the 30 minutes and that was too long so they were a bit dry. I'm thinking the pan might be a bit large for the amount of batter which could have contributed to the dryness. Other than that they had great flavor!

Chicken Enchiladas II

These enchiladas were DELICIOUS and very easy to make. I substituted corn tortillas for the flour; softening them up in the microwave and then a little heated oil before rolling. My family does like onions so I sauted 1 large clove garlic instead of using green onions. I also added adobo seasoning and cilantro to the chicken mixture. I cooked the enchiladas for 15 minutes, then added the cheese to the top along with drizzling some Mexican sour cream and continued cooking 15 more minutes. I will make this recipe again and again!

Ten Minute Enchilada Sauce

I am in agreement with the other reviewers. FANTASTIC! The second time I made this I only had 16 oz. tomato sauce and followed recipe but used 1 can water and added 1/4 t. cinnamon for a Jalisco type flavor.
