Delicious Ham and Potato Soup

Fantastic!!! I used 2% milk and the roux didn't quite thicken up... I was feeling skeptical about the recipe but then I added it to the potatoes and broth and miraculously it turned out perfect. It's a must-try recipe!

Grandpa's Classic Coney Sauce

Tofu Parmigiana

We are first time tofu eaters and we thought this dish was great. We had low expectations about tofu and this exceeded our expectations. I put salt and pepper on the slices, dipped them in egg, and then italian breadcrumbs. I baked on a oiled cookie sheet at 375 for 20minutes and then used jar-sauce to follow the recipe.

Roasted Brussels Sprouts

I never thought I'd eat brussel sprouts but these are tender, "buttery" and delicious. I love the crunchy outter leaves. I'm a brussel sprout convert!

Best Big, Fat, Chewy Chocolate Chip Cookie

I tought these were great! Thick and chewey. I didn't bother sifting the flour, etc. Used 1 cup milk chocolate chips and a half cup mini semi-sweet chips. I like to use some minis because they really mix well throughout the dough. This way I have a bit of chocolate in each bite!

Grilled Asian Chicken

This was grrreat! I made it with boneless, skinless chicken thighs. Next time I have to remember to salt and pepper the meat first. I would serve this to company at a BBQ. Served it with cauliflower and potatos.

Baked Whole Cauliflower

This was suprisingly tastey. My husband loved it. We made it with an orange cauliflower. It made a pretty contrast with the bread crumbs.

Grilled Baked Potatoes

I've tried these twice. Once with fresh rosemary and the secnd time w/ Herbs de provence. Made them on the grill and the second time in the toaster oven (our barbeque got rained out). Extremely easy to make and tastey!

Seasoned Turkey Burgers

Quick and easy version. I made mine with ground turkey breast, which is a little drier. I put the soup mix, soy, egg, spices into my mini-chopper first. Ground it up, then added some fresh parsley from my garden for color, and gave it a quick pulse. Finally I mixed it all into the turkey and let it sit for a half hour. Very tastey.

Lemon Garlic Hummus

I've made a few Hummus recipes, this one is excellent. My husband and I are trying to eat lowfat so we only used a 1/4 cup of oil and it was great. If you like hummus, you'll love this.

Tender Breaded Turkey Cutlets

This is great. I flipped my chicken with a fork and had no trouble with the breading. It tastes like a chicken schnitzle recipe I have from a gourmet magazine...but much easier. I added some chives and garlic paste into the sourcream and dijon mustard mixture. Very yummy dish.

Turkey Burger Pie

My husband loved this turkey recipe. We made it once as directed and a few days later I was trying to get rid of some frozen cocktail shrimp, we made "shrimp burger pie". I threw the shrimp in a saute pan with some onions and taco seasoning... heated the shrimp until they shrunk a little and lost some water... Then made the pie. Came out good!

Asian Roll Lettuce Wrap

My husband and I LOVED this recipe. We had a leftover roasted chicken from Costco with the thigh and leg meat left. We shredded that into pieces and then added veggies and ginger sauce on top... yummy!

Swedish Meatballs

My swedish husband loves these! Very tastey. We have tried the recipe/sauce with fat free evaporated milk. It was just as tastey. Just be prepared to stir the milk/water/flour mixture much longer before it thickens.
