Carrot Cake III

I am not a huge fan of carrot cake. I made this for my bf who is always begging for anything not chocolate. I used the suggestions from gneebeanie and it turned out amazing. Initially, I had just a tiny piece, but had to back for more. This recipe made me a carrot cake lover, thank you!

Carne Guisada II

I don't have a crock-pot and just used the stove turned to low. Mine was done after about 2 1/2 to 3 hours. There is no need to cook this on the stove for 8 to 12 hours. Served buritto still with rice, beans, sour cream, cheese, and tomatoes. It was delicious and so easy. Will make again.

Chocolate Mint Candies Cookies

These cookies taste like a softer version of the Girl Scout thin mints. Absolutely amazing. I used 1/2 an Andes mint on some and a full on others. I prefer the 1/2 mint, but the boyfriend prefers the full.

Winter Fruit Salad with Lemon Poppyseed Dressing

A reviewer said the dressing reminded them of lemon juice and they were right! After reading reviews I cut the sugar down to 1/3 cup and substituted blue cheese for swiss. My book club loved it.

Apple Crisp II

The reviewers are correct this is amazing. I used Granny Smith apples, added a pinch of nutmeg, decreased the water, and doubled the topping (which I layered on the top and bottom). Although I love crumb topping, I actually thought that doubling the crumb topping was a little much.

Sugar Cookie Icing

Ok, so the measurements for this recipe are way off. Just keep adding milk, vanilla, and corn syrup until you get a desirable consistancy. This icing is so shiny and looks professional. People have been commenting on it all week!

The Best Rolled Sugar Cookies

I have made this recipe twice now, using a couple of different changes. The first time I added just 1 cup granulated sugar, 1 cup of powdered, and 2 tsp of vanilla. The second I added a Tbsp of vanilla and 3 cups of granulated sugar, and I prefer these revisions. You have to really chill these (freezer for an hour or so) and use a lot of flour to ensure they don't stick.

The reviews are right this is really great snickerdoodle recipe. I followed the recipe exactly, but on half I put cardamom and sugar in place of the cinnamon and sugar mixture. Not as good, but an interesting change.

Fresh Southern Peach Cobbler

We loved this and have made this a couple of times. Tastes great with frozen peaches, or once we didn't have enough peaches so substituted nectarines and apricots. Still amazing. Give this a try, you'll not be dissappointed.

Best Brownies

Followed the recipe exactly and these were not the best brownies I have ever had. Good texture, but nothing to rave about. I do prefer brownies made with a chocolate bar as opposed to powder.

Tiramisu Layer Cake

I was skeptical about such high reviews for a box cake mix, but this is amazing. I doubled both the liquor and coffee whenever added. I took this to book club and everyone loved it! Thanks for the amazing dessert.

Downeast Maine Pumpkin Bread

I was really disappointed with this recipe after all the great reviews. Before I attempted this recipe I read through a bunch of the suggestions and changed the sugar to 2 cups white and 1 cup brown, other than that I followed the recipe exactly. I let this sit overnight before taking it to a work breakfast potluck. It was rather bland and half of it was left uneaten.

Clone of a Cinnabon

These were good. Made the dough by hand and it is a must that you use bread flour as AP produces a different (although still tasty) texture. Never been to Cinnabon, but if they are as tasty as these rolls than it must be worth it.

Veggie Vegetarian Chili

This recipe is good, but I made some changes. First I drained the beans (and added veggie stock), left out the mushrooms, and added celery. I also cooked this for much longer, close to an hour. Very filling and delicious.

German Rouladen

I made this to kick of the start of Octoberfest. I was nervous about the amount of prep, but once started the assembly and cooking of the rolls went really fast. I regret not reading all of the reviews because I would have liked to cook this just slightly longer than an hour. Everyone loved it and they were a huge success.

Chocolate Peanut Butter Cup Cookies

I made these cookies without deviating from the recipe (ok, so I did use the small peanut butter cups cut in half, froze, and then inserted into the middle) and they are delicious with a great consistency and texture. Will make again!

Beth's Spicy Oatmeal Raisin Cookies

I absolutely love this recipe. I used all butter because that is all I had on hand. I also used pumpkin spice in place of the spices and chocolate chips for raisins. Even without these changes these cookies would be so delicious. I am surprised any got baked we loved the dough so much. Thanks Beth!

Old Fashioned Paradise Pumpkin Pie

I did get a little mixing even though I poured the cheesecake mixture over a frozen pie crust and left that in the freezer. The pecan topping though hid any imperfections. The taste was really great, although next time I think I'll add some cinnamon to the topping.

Pumpkin Cheesecake Slices

This recipe is really easy and tasty. My crust was really thin, so next time I think I'll use 4-4 1/2 cups of gram crackers. I also baked a pumpkin and used the pulp from that. This increased the prep time, but I think it gave it more flavor (with the addition of pumpkin spice).
