Southern Spicy Fried Chicken

Reviewed: Oct. 20, 2009
So delicious! I omitted the hot pepper sauce and used 1/2 tsp of cayenne for the buttermilk mixture and 1 tsp of cayenne for the flour mixture because I didn't want it to be too spicy for my kids.

Apple Pie by Grandma Ople

Reviewed: Oct. 13, 2009
This pie is very very yummy. The only complaint that my husband had was that it was too sweet. I will probably cut back on the sugar a little bit next time.

Mom's Chicken Cacciatore

Reviewed: Oct. 12, 2009
This was just ok...'nothing special' my husband said. I always relate how much I like something by how good it tastes in relation to the effort put into making it. To us, this wasn't worth the effort and I will likely not make again.

Mom's Secret Recipe Beef Stew

Reviewed: Oct. 11, 2009
This was soooo yummy! The only thing I did differently was that I used Olive Oil instead of Vegetable oil. My husband (who does not like Beef Stew) loved it.

Fried Chicken Tenders

Reviewed: Oct. 3, 2009
These were ok but a little bland. I made them as stated. Next time, I will add salt, garlic and a touch of paprika to the flour to add a little more flavor.

Carrot Cake III

Reviewed: Sep. 19, 2009
My 3 rating is rating this cake as written. The only thing I did differently was use 1C white and 1C brown sugar, a cup of applesauce and 1/4 cup of oil (1 1/4 C oil is a lot of oil, so I was trying to cut down on fat) as well as some minor alterations to adjust for high altitude since I live about a mile high (raised temp 25 degrees, decreased sugar by 1 T, increased applesauce by 1T and decreased baking powder by 1/4 tsp). I, also, made it in 2 9 inch pans (for about 25 minutes) and doubled the frosting to make a layered cake. I tasted the batter after I'd made it as written and it was really bland. So, I added a 1/2 tsp of nutmeg, another tsp of cinnamon and another tsp of vanilla. With my changes, it was WONDERFUL! I couldn't get my company to stop eating it. I will definitely make this again!

Veronica's Hot Spinach, Artichoke and Chile Dip

Reviewed: Sep. 19, 2009
Very very good! I, also, added garlic. Next time I will bake it with some tortilla chips on top. It was SOOOO YUMMY! edited 11/18/13: I have made this recipe at least 50 times and am now under strict orders to make it at EVERY single gathering. We've tried different things and found that we prefer tortilla chips the best. The added salt is just YUM! I usually double the recipe which adds to the cooking time. It makes good leftovers, too. A staple in my house.

Southern-Style Buttermilk Fried Chicken

Reviewed: Aug. 28, 2009
This was wonderful. I used breasts cut into 1/4s. I also cut back on the cayenne because I was concerned that it would be too spicy for my kids. It wasn't spicy at all! It was wonderful! Will make again. My husband made white gravy to go with it and couldn't stop eating.

Grandma's Moist Cake

Reviewed: Aug. 16, 2009
Ok. I had to adjust this just a bit for high altitude. I added 1 T of milk and raised the temp to 375. Otherwise, I made it per the recipe. This was very good, but SOOO sweet! Too sweet, I think. The next time I make it, I will cut the sugar back to 1 1/2 C.

This was good, though not great. The chicken was flavorful, but done much sooner than the potatoes.

French Coconut Pie

Fantastic. Before mixing filling, line pie plate with crust...and after removing from oven, cool completely before cutting. My family LOVED this, though I must agree that it is rich. Small pieces are plenty.

Chocolate Caramel Brownies

Reviewed: Jun. 15, 2009
These were pretty good, but mine did not turn out like the picture and weren't 'to die for'. The brownie part was much lighter in color. I think they would be a lot better if I use a Devil's Food Cake mix instead of German Chocolate.

I didn't like these at all. They had too much baking powder and not enough flavor. Will not make again.

Strawberry Oatmeal Breakfast Smoothie

Reviewed: May 11, 2009
Very yummy, though I made a couple of changes. I used regular milk and a 1/2 C of Vanilla yogurt. I used an artificial sweetener instead of sugar and omitted the vanilla and banana (I didn't have one). I LOVED the oatmeal in this! It covers up the seeds from the strawberries and makes it so filling!

Yin-Yang Salmon

Reviewed: May 11, 2009
I thought this was very tasty, but way too hot (and we like hot food..)...and I only used 1/3 C of hot sauce. My 4 year old couldn't even eat it. Next time, I will go down to 1/4 C of hot sauce.
