Chicken Tetrazzini I

My boyfriend and I didn't care for this at all. It was SO bland..even after adding tons of herbs to it. While the chicken was cooking it had such a great aroma, but once I combined everything there wasn't much flavor. I omitted mushrooms since my boyfriend doesn't like them so instead of using regular cream of chicken condensed soup I used a can of cream of chicken and mushroom. I added lots more garlic and way more seasonings and herbs. I also used egg noodles instead of spaghetti. I was very disappointed. This was my first time ever tasting chicken tetrazzini and making it. I wasn't impressed. Sorry. I think next time I will try the other recipes listed that have sherry and other liquids in it for more flavor.

Pork Chops with Blue Cheese Gravy

This was delicious! I did a few things different. I used boneless pork loin chops & added fresh garlic & cooked them slowly until slightly brown. I then made the bleu cheese gravy & added some fresh mozzarella to it (just a little bit) and let the chops simmer in the gravy for about 1/2 hr. until they were nice & brown. I put some of the left over gravy on fresh green beans and served with mashed potatoes. My boyfriend loved it & went back for seconds! Great recipe!

Mom's Best Spaghetti Sauce

I was disappointed with this sauce. My boyfriend and I didn't think it tasted any different than jar sauce. The only difference was that it was sweeter due to the sugar. I followed the recipe and cooked it all day and let it sit overnight. I started it on the stove and then put it in the crockpot on low for the rest of the duration. The only thing I did differnet was add more basil, garlic and other seasonings which we couldn't taste anyway. I also changed the serving size. The flavor was just "alright". After reading all the reviews I thought it would be great. My co-worker tasted the sauce and said the same thing..it's not spectacular. It's alright. I've made worse and I've also made better. I won't make this again. Very disappointing. Sorry!

Blue Cheese Green Beans

This recipe turned out very good despite the trouble I had blending the ingredients together. I used heavy cream instead of half n' half and I also added more blue cheese. The consistency was so thick it wouldn't process. I dumped all the ingredients in a frying pan with the bacon grease and sauteed it that way. I added a little bit of water and more olive oil and cooked it down then poured it over the beans. If I had measured out the bleu cheese I probably wouldn't have had such a problem. It still turned out delicious!

Rita's Sweet Holiday Baked Ham

I used a smaller ham about 9.63 lbs. and marinated it overnight. I did baste the ham while inside the bag using a turkey baster. I stuck the baster thru the slits in the top of the bag. I also added the juice from the pineapple and added more cherry juice for extra flavor. I had some issues with the cooking bag. About 1 1/2 hours into cooking somehow the bag seared itself to the bottom of the baking dish I used and it came apart. The juice was all over the dish so I removed the ham from the bag and covered the ham with tin foil and rubbed brown sugar on the top of the ham. It turned out delicious! Very moist and flavorful. I will not use the cooking bag again, but I will definitely use this recipe for ham again! The juice made a wonderful gravy too!

Celery Stuffing

This recipe was a big hit! I made it for Easter dinner and it complimented my ham very well. I changed the serving size to 8 and I also used rubbed sage in addition to ground sage and added in marjoram and thyme for more flavor. I used 1 can of chicken broth and baked it a little longer so the top would be crispy. It was delicious!

Baked Creamed Corn II

This is by far THE BEST recipe I have ever had for creamed corn. I do not really care for the "normal" way cream corn is made. I don't like the soupy consistency or the texture or flavor. I love the baked texture of this!! This recipe was not only delicious, but very easy! This is the only way I will make creamed corn. Great recipe..thanks!
