White Pizza Dip

I am always reluctant to try new recipes when I am taking them to a party.....but this was a HUGE hit!!!! Very easy ---- I did double it and added more mozzarella!!!!! Pepperoni added additional flavor and color!!!! Great recipe...a definate "keeper" that I will share with my friends ----- eventually!!!!

Laurel's Lasagna

This recipe takes a little more time to prepare, but it is well worth it!!!! My family LOVED it.....!!! I used the "no cook" lasagna for this, and I think the cottage cheese and the colby cheeses make a big difference!!!! I also substituted smoked turkey sausage for the ground pork and it was GREAT -- and cuts the fat a little!!!!! It definately freezes well and will be a "keeper" at our house!!!! Eggplant Parmesan II

This was a very good, easy and healthy version of this dish. I did salt my eggplant first for about 20 min, and let stand in colander in the sink..then rinsed it well w/ cold water - it takes the bitterness out of the eggplant. I used Italian breadcrumbs and added some garlic pepper to them. My family loved it, and no frying!!!!!

Easy way to stuff the manicotti is to make the stuffing and DO NOT COOK the manicotti, and stuff before you cook.....Simply add 3/4 c of water to your sauce and cover when baking and it is GREAT!!!!!!! I also use lowfat cottage cheese and mix it w/ the ricotta!! Great recipe!

Jamie's Cranberry Spinach Salad

I made this fabulous salad for Thanksgiving, was met w/ RAVE REVIEWS!!!! We are big salad eaters...and this was fabulous! I used spring mix and added a bunch of baby spinach to it (even though it is already in the mix) The dressing is wonderful!!!!!!! Thank you Jamie!!!

RamJam Chicken

Laura...this was GREAT!!! I bought skewered chicken for my daughters' Grad Party.......I precooked it..then marinated it in your marinade while it was still warm...then reheated...!!! Everyone raved.......cant wait to try it on the grill...!!! Had too many people to grill it for the party..but it was very good and moist---everyone enjoyed it!!!! Thanks for sharing it...I will definately use this recipe again!!!! Doreen
