Apple Walnut Salad with Cranberry Vinaigrette
This salad is amazing! I LOVE the dressing so much. The only change I make to the dressing is to use less onion (about a 1/4 of a LARGE onion) and to use only 1/2 cup of olive oil, other than that I follow it exactly and it comes out delicious! I ususally use a mixed greens/baby spinach combo for the lettuce and add crumbled fat free feta cheese to the toppings - SO, SO, SO good!

Coconut Tilapia with Apricot Dipping Sauce
Recipe turned out great! I had this at a restaurant with a honey cream sauce so I tried to duplicate that sauce instead of the apricot sauce but the fish itself was wonderful. It turned out very moist on the inside and crunchy on the outside. My fiance liked it too - and he's not a "fish" person :)

Breakfast Pizza I
Very good recipe! I made a few changes to use what I had on hand - instead of using crescent rolls for the crust I used a ball of pizza dough that I had thawed the night before. I spread that into the bottom of a 13x9 pan and baked it for 7 minutes before adding the toppings. I also didn't thaw the hashbrowns before spreading them on - just put them on frozen. Then I sauteed diced ham (didn't have any sausage), onions and red bell pepper and put that on top of the potatos. I topped it all with the scrambled egg mixture and shredded low fat cheddar and baked it for 27 minutes. It turned out GREAT! My fiance loved it and ate half the pan! Will definitely be a keeper :)
