Traditional Mashed Potatoes

Cornbread I

I did not have buttermilk so I mixed 1 cup of skimmed milk with 1 T. of vinegar, and I also added 3/4 cup of flour. Like many others, I also only used 1/2 t. of salt. Then, I added about 1 T. of oil to the recipe, too. I did not let the shortening melt in the pan. I instead used a 9" cake pan, and greased that with oil. Then I poured the cornbread mixture. I did not mix the mixture with the oil on the pan. My cornbread was ready in about 20 minutes. Yum!

Creamy Banana Bread

I used 1/3 cup of applesauce instead of margarine, used an 8 ounce package of fat free cream cheese, mashed 3 bananas, used 1/2 cup of applesauce with 1/2 teaspoon of baking soda mixed in instead of 2 eggs. I also omitted the pecan mixture, and instead chopped up 1/2 cup of walnuts, and threw them in the banana bread mixture.

Best Carrot Cake Ever

This is a perfect carrot cake, although a bit sweet. I took away 1/4 cup brown sugar, and added 1/4 cup extra raisins so it would be a little sweeter. I also substituted the eggs with applesauce with baking soda and flaxseed egg substitute. Therefore, this recipe turned out vegan.

Veggie Vegetarian Chili

What a wonderful chili! Cheap to make too. =) I like to add some extra corn, as I love corn. I especially love the fact that this recipe is so versatile. If I am out of jalapenos, I just add some extra Tabasco and cayenne pepper. If I only have two, not three cans of beans, I can just add some extra veggies. And if some carnivores really want some meat, I will add a pound of ground turkey (healthier than ground beef). However, if you add meat to this chili, I would recommend adding more cayenne pepper and Tabasco sauce. It seems that when meat is added, it soaks up a lot of the heat, as it is not as spicy.
