Garlic Mashed Potatoes

Very good and very easy. I used half of the butter that the recipe called for and substituted fat-free sour cream for the other half. I will definetly make these again!!

Chili I

Vert good-I used only half of the sugar and half of the cayenne pepper called for. Next time I will use more sirloin. A very hearty, tasty recipe.

Mom's Best Peanut Brittle

I am a first time candy maker and found this recipe easy to make. I did invest in a good candy thermometer and had all of the ingredients ready to go. The peanut brittle was PERFECT-it looked and tasted great. My husband and I were both very impressed. This is going into my recipe box!

Caramels

I never made caramels before and thought that they would turn out like taffy. I followed the directions exactly and made the most wonderful tasting caramels. This will be my caramel recipe-I need not look further!

Simply Lemon Baked Chicken

This chicken is sooo easy- it is tender, moist and delicious!! I used 1T of salt on the outside and 1-2t of salt for the inside. I do have one suggestion-seal the entire chicken in foil with 1/4C water, place in a roasting pan and cover. Put the chicken in the oven for 3 hrs and forget about it. This eliminates the need for basting. You'll have the juiciest chicken!

Quick and Easy 20-Minute Chicken Posole

Mmmmm-very easy and very tasty. I didn't have hominy, so I used cannellini beans. I added some corn, a little garlic salt and extra olives. Next time I will use less broth and will serve with tortilla chips.
